Chipotle in Adobo:
This canned condiment consists of dried, smoked jalapenos in a tomato, onion, paprika, and vinegar marinade. I like to puree the mixture and use it as a smoky-spicy ingredient in soup, dumplings, and sauces. Chipotle in adobo comes in 2- to 3- ounce cans. It’s wise to puree an entire can, use what you need, and store the rest for future cooking or use an accompaniment to burgers, ribs, or similar dishes. The puree will last for months. See my Chipotle Sweet Potato Soup recipe for a great way to use Ginger! Q uite frankly, many people are intimidated by Asian cooking. I, for one, am of course on a mission to let people know otherwise! They should roll up their sleeves, whip up easy dishes and let the mouth-watering Asian aromas waft through their homes. Asian cooking is such fun! Maybe some people are hesitant because they haven’t heard of the ingredients or the dishes just “sound” too exotic. This section is designed to take some of the mystery out of Asian cuisine. Once you know what you’re cooking with and you feel comfortable chopping, dicing, or pouring it, you can tackle any recipe!

Thai Recipes and Indonesian Food
The South Asian countries of Thailand and Indonesia are geographically close and, not surprisingly, Thai and Indonesian recipes use many of the same ingredients. Curries are popular in both countries, and green currychicken , in particular, based on coconut milk, is one of the most well loved meals. Thai and Indonesian curries are not as hot as Indian curry, which also has a different flavor.
Chicken curry's basic ingredient, other than chicken and coconut milk , is the curry paste, made from lemon grass chili pepper and spices . Many varieties of curry are used in Indonesian and Thai recipes, but Thai Green Curry is probably the most well known of the curries.
If you travel to South Asia, don't balk at trying Thai or Indonesian food. As with Indonesian recipes, the chili pepper plays a major role in Thai recipes. Both cultures prepare meals the old-fashioned way , with the mortar and pestle performing the important function of grinding and pounding chiles, garlic and other vegetables into a powder or pulp.
Rice is the staple of all meals, whether served as a side dish or as a main meal of fried rice. For dessert or a snack, green papaya can be found anywhere in South Asia and you'll see that papaya is a refreshing and often tart delicacy.

We have collected some favourite recipes after a couple of years in Singapore, and adjusted the recipes to Norwegian taste buds as well as ingrediences that are available outside the region. But we avoid MSG and other fake taste-elements. And we use plenty of garlic. The dishes will normally serve 4 persons (one dish, some vegetables and rice), but if you make the lot you can invite 15-20 persons. Heat up the Wok and get going! The recipees are collected here.
