I 1712 sees han påny å være kommet noe til krefter, idet han da kjøpte en anpart, 28 merker smør, i gården Midbø. Han eiet nå også gården Egeland, 36 merker smør, i Heskestad. I 1717 opptrådte han som befullmektiget i havarisak. Han nevnes 1720 som værende østerpå og 1721 som "velfornemme borger" i et skifte i Sogndal. Død på Hvidbrandsøen ved Haugesund 4. desember 1726 og begravet i Haugesund kirke. Indsatsen omfatter undersøgelser af lipidoxi- dation og antioxidativ kapacitet i mælk, kød og æg samt grundlæggende reaktionskinetiske studier af oxidative pro- cesser. Endvidere gennemføres der løbende udvikling og implementering af nye analytiske metoder. Oxidative ændringer og antioxidativ kapacitet bestemmes ved en række analytiske metoder som TBARS (thiobarbitur reaktive substanser) , POV (peroxidtal), konjugerede diener, headspace analyser, måling af iltforbrug, Total Oxygen Scavenger Capacity Assay (TOSCA) og indhold af antioxidanter (urinsyre, ascorbinsyre og tocopherolen) og oxidation af disse. Resultaterne af disse undersøgelser sammenholdes med ændringer af funktionelle egenskaber og smag. Desuden anvendes modelforsøg til at illustrere hvilke mekanismer, der er ansvarlige for givne oxidative ændringer. En stor del af forskningen er fokuseret på at undersøge be- tydningen af metalchelerende proteiner (f.x. lactoferrin og phosvitin) i mælk og æg, og undersøge om frigivelse af overgangsmetalioner fra disse proteiner har betydning for propagering af oxidative processer. I de understøttende modelstudier fokuseres navnlig på samspillet mellem pro- teinet og ascorbinsyre eller citrat.

L’ouvrage de Jacob Nielsen, Le livre a certainement pour but d’aider à construire un site, mais pas dans le sens où il enseignerait la programmation ou donnerait des conseils à propos du e-business qui fera instantanément du lecteur un millionnaire. C’est plutôt un traité d’architecture pour le Web, pour ainsi dire. Jacob Nielsen ne donne pas une opinion, mais partage une analyse, fondée sur la recherche et l’expérimentation. En cela, son ouvrage est un excellent outil pour la réflexion: il donne un aperçu concret de la réalité du Net. Des illustrations généreuses et des critiques de sites viennent appuyer l’analyse, donnant l’image d’un livre parfaitement "ergonomique". Jacob Nielsen dit ce qu’il faut faire, plutôt qu’il n’explique comment le faire.
