I am often asked why a promising new restaurant that seems popular should suddenly go out of business. Restaurants depend upon regular patronage and ultimately we get the restaurants we deserve. The restaurant business is one of the fastest growing sectors in the British economy. As consumers we have become more confident and our taste increasingly sophisticated. We therefore demand more than just decent food and drink. What restaurants sell is not just sustenance but theatre - we want the experience to be entertaining and relaxing. Each of us has an instinctive feeling of what constitutes value for money - we may feel that a very expensive dinner eaten over several hours in a grand palace of gastronomy in the West End has been worthwhile. Similarly we may decide that a hastily snacked lunch in a pub or cafe at a set price is a rip-off. Those who overcome their prejudice are agreeably surprised. The quality of the food is exciting making use of fine Welsh produce - lamb from the salt marshes, Black Mountain beef, excellent venison and lavabread (a type of seaweed). Les Gallois also offers a great selection of Welsh farmhouse cheeses.

Let's face it, gazpacho Andaluz with frozen olive oil and crushed avocado, or courgette flowers, smoked shrimp, pea puree and golden marjoram dressing, isn't your usual pub fare, even in this new age of the enlightened gastropub. But then, the FFG isn't your bog-standard wayside watering hole. It's a kind of dream inn; a very contemporary dream, I should say. There are tiled floors, big beams and wooden pillars; Granny's kitchen table, schoolroom chairs, well-worn leather sofas and armchairs; crack service from a team so young that I felt I ought to check their birth certificates; and clientele fresh from a shoot for the Boden catalogue - that is, well-to-do, well-heeled and in the process of getting well-oiled (but politely so). You might expect this in the home counties, or Oxfordshire, perhaps, or even coastal Norfolk or Hampshire at the weekend, but Wales, just up the road from Brecon? Well, why not? We'll have none of those blinkered metropolitan prejudices in this column. There's been a growth market in rated eating places in the principality, yet it's still a bit like coming across an unmarked oasis, complete with the odours of fine cooking, in the middle of some particularly sere desert. And the cooking smells were very enticing indeed. I went for conger eel with new potatoes, pickled onion and parsley mayonnaise, and then roasted wild pigeon, buttered spinach, honey-braised parsnips, creamed lentils with pancetta and trompettes mushrooms.

I n the June 2001 issue of its magazine and Web site, the National Geographic Society is featuring a story on the country of Wales I had to turn no further than to Welshman Chef Jos Wellman for help. When he got my call, he happily dug out his family's personal cookbooks and flipped through his own recipes to handpick several favorite dishes. made with whatever's on hand in the fridge or on sale at the market. For a recipe like this, a Welsh cook would typically cut the vegetables in chunks and perhaps bulk up the dish with sliced potatoes. In this version, Wellman has omitted the potatoes and finely chopped the vegetables. "It's a more elegant presentation that's perfect for Spring," he says. To accompany the broth, he's included the world-famous Welsh rarebit croûtes, which are made with another renowned Welsh ingredient, Caerphilly cheese. But a word of caution: "Caerphilly is a very sharp cheese that gives the rarebit its distinctive flavor. If you can't find it, ask your cheese monger for the absolute sharpest Cheddar cheese he has," Wellman suggests. "To test it, take a bite; if it bites you back, it's a winner." If it's a more substantial meal you're looking for, consider Swansea fish cakes with a cockle sauce and minted peas, a dish that's popular in Wales' capital of the same name. "This recipe highlights a ubiquitous ingredient of Welsh cuisine: local seafood," says Wellman. Each of the 13 Federations in Wales took part in the project, which aimed to promote the Welsh language within the organisation, and in the community in general, by increasing the opportunities for members to use the language, to learn it, as well as raising awareness of Welsh culture, traditions and history. Each Federation has a language plan in place and most have reached the targets set for them during the project such as having bilingual messages on answer machines, using bilingual headed note paper and holding bilingual meetings and events. During the course of the project, Federations held Welsh evening or afternoon events, with activities such as folk dancing, Welsh cooking and traditional singing. These events gave members the opportunity to learn simple but useful Welsh vocabulary. An information pack and guidelines unique to each Federation has been produced which provides useful contacts and tips.

Recipes Simply Japanese There are a lot of urban myths about Japanese cooking. The biggest of these is that it's tricky to cook Japanese style food. There is some truth in this idea. At the very highest realms of Japanese food preparation there are dishes that can take a lifetime to master. Lethally poisonous fish can be prepared into dazzling dishes only by the most experienced and devoted chefs. However, everyday cuisine in Japan is nutritious and delicious, and easy to prepare. Here's my adaptation of a classic Japanese dish, Tempura. It's an extremely versatile dish. Simply experiment!

Gilli is a wonderfully enthusiastic cook who specialises in traditional Welsh cooking, as well as the food of Cyprus. She has written lots of books about food as well as many TV and radio programmes. I've chosen Gilli's Bara Brith recipe, as good bara brith is so hard to find outside of Wales. It's a very straight forward recipe, and kids love making it, too.

Welsh Gifts and Crafts Wales is a small principality situated on the west side of England; it has its own national anthem ( Hen Wlad Fy Nhadau ), official language (Welsh) and flag (a red dragon on a field of green and white). The Welsh are Brythonic Celts, along with the Cornish and Bretons. The Gaelic Celts are the Irish, Scots and Manx. Welsh is not a Gaelic language, as is so often mistakenly thought. Besides the red dragon, other common Welsh symbols are the leek and daffodil and lovespoon. The Welsh celebrate their heritage on March 1, the date of the death of their patron saint, the sixth-century St. David. Wales is beautiful, with mountains, rolling hills, ocean coastlines, old towns and ancient monuments. Welsh drivers tank up on cooking oil Police in a Welsh town have set up a special "frying squad" to tackle Britain's latest motoring fraud: running diesel cars on cooking oil. The unusual practice - reckoned to cause long-term problems for mechanics - is expressly forbidden in Britain, where stiff taxes on conventional fuels are a major source of government revenue. LLanelli, in west Wales, has several diesel drivers who prefer to mix a 32 pence (51 euro cent, 50 US cent) litre of cooking oil with a splash of methanol, compared to 73 pence for a litre of diesel.

Sgonau Caerffili (Caerphilly Scones)
Description/Notes:
Caerphilly cheese gives a delightful flavor to these scones. Don't forget to spread with butter before serving. Delicious.
Ingredients:
  • 350g (12oz)) flour
  • 1.5ml (!/4tsp.) salt
  • 15ml (3tsp) baking powder
  • 40g (one and a half ounces) butter
  • 150g (5oz) Caerphilly cheese
  • 300ml (1/2 pint) milk
  • pepper to taste
    Cooking Instructions:
  • Preheat oven to 220C, 425F, Gas mark 7
  • Sift together the flour, salt and the baking powder
  • Rub in the butter
  • Grate the cheese finely and add to the flour and pepper
  • Mix all the ingredients well and then add enough milk to form a soft dough
  • Roll out to about 2.5 cm. (1/2 inch) thick and cut into rounds
  • Place on a baking sheet greased with butter
  • Bake in preheated oven for 15 to 20 minutes
