Makes 6 servings
1/2 cup dry bread crumbs
1/2 cup milk
2/3 pound ground top round beef
1/3 pound ground pork
1 teaspoon dried thyme , crushed 1 medium clove garlic , minced 1 small onion (about 4 ounces), grated 1 large egg , lightly beaten 2 tablespoons oil 1/2 cup water Lingonberry or cranberry relish Mix the bread crumbs and milk together in a medium-size bowl. Set aside for 15 minutes to allow the bread crumbs to absorb the liquid. In a separate bowl, combine the ground meats, thyme, garlic, and grated onion. After the meat mixture is combined, form a well in the center of the meat. Pour the beaten egg in the well. Using a fork, mix the bread crumbs into the egg. With your hands, mix all the ingredients together until just combined; don't overwork the meat or the meatballs will be dense. For ease in forming the balls, chill the mixture for 30 minutes. To form the meat balls, dip your hands into water, then roll the meat into balls about 1 1/2 inch in diameter. This is a soft dough, so don't worry of the meatballs are not perfectly round. Heat in a large skillet, add the oil, and then add the meatballs to the skillet. Sear the meatballs over medium to high heat for about 3 to 4 minutes. When the meatballs are evenly browned on all sides, add the water to the pan and continue cooking over low heat, shaking the pan occasionally, for 10 minutes, or until the meat is cooked through. Serve warm or at room temperature, with a lingonberry or cranberry relish.

Recipes Cooking is one of my passions. I'm best known for my French cuisine but in a past few years I've expanded my repertoire into realms of Chinese, Indian, Italian and Japanese cuisines.

Here are some of my favorite recipes. Some of them are in Finnish so it may be a little hard to use them. Sorry about that. The recipes in the untested section are untested by me but have been given by people whom I believe to know what they are writing about.

Beurre Blanc - voikastike
(4-6 annosta) 3 salottisipulia 2 rkl valkoviinietikkaa 1 dl valkoviiniä tai vettä 250 g voita suolaa, pippuria ja sitruunamehua Salottisipulin voi korvata keltasipulilla (se tavallinen sipuli) Silppua sipuli hyvin. Sekoita silppu viinietikan ja viinin kanssa kasarissa. Keitä kokoon niin, että siitä jää jäljelle noin puolet. The Christmas Eve in Finnland starts mostly with a rice porridge and a soup made of dried fruits.
Uunipuuro (Rice porridge)
1 dl water 1,5 tsp salt 9 dl milk 1,5 dl rice
Butter an ovenproof casserole, add water, salt, cold milk and rice. Mix them. Add one almond to bring luck for the coming year. Let the porridge cook 2 hours in 170 C degrees. In the end you can put the heat lower, if the surface becomes too brown. Traditionally this porridge is served with cinnamon and sugar and/or the following soup.
Sekametelisoppa (Dried fruit soup)
75 gr dried fruit 6 dl water 0,5 dl sugar
0,5 potato starch 1 dl cold water
Let the dried fruit soak for a couple of hours. Cook the fruits and sugar in the water until the fruits are soft. Mix the potato starch and water. Take the kettle out from the stove. Thicken the soup with the potato starch mixture. Put the soup again to the stove and let boil quickly.
And then we come to the buffet table. It is always plentiful. The following courses are almost always present in Finnish Christmas table.
Kotijuusto (Home-made cheese) 3 l milk 1 l sour milk 3 eggs 1 tl salt Put the cheese mass to a cheese mould or a sieve, which is lined wit a clean and transparent cloth. Put a light weight over the cheese and let it drain until the next day.

As of November 2002 when this site was started, there were only a handful of mojakka recipes on the whole World Wide Web, most using beef. Further searching came up with this recipe from the heroine of Finnish cooking, Bea Ojakangas of Duluth, Minnesota. Though not called "mojakka", it contains the traditional ingredients of kalamojakka. Visitors to this site have contributed the following recipes. The variation is rather surprising.

Let cool until lukewarm. Dissolve the yeast in the warm water. Stir in the lukewarm milk, sugar, salt, cardamom, 4 eggs, and enough flour to make a batter (approximately 2 cups). Beat until the dough is smooth and elastic. Add about 3 cups of the flour and beat well; the dough should be smooth and glossy in appearance. Add the melted butter or margarine, and stir well. Beat again until the dough looks glossy. Stir in the remaining flour until the dough is stiff. Turn out of bowl onto a floured surface, cover with an inverted mixing bowl, and let rest for 15 minutes. Knead the dough until smooth and satiny. Place in a lightly greased mixing bowl, and turn the dough to grease the top. Cover with a clean dishtowel. Let rise in a warm place until doubled in bulk, about 1 hour. Punch down, and let rise again until almost doubled.
