  • Getting kids interested in food
Letting kids help in the kitchen and at the market
Exploring food at restaurants and in the community
Discovering food in fairy tales and stories
Finding food in the media, on the Internet, and on the computer
  • How Can I Get My Kids Interested in Food? The best way to get kids interested in food is to make it mean something to them. Help them make connections between food and their everyday activities. Take the Food Guide Pyramid as an example. Your kids can probably recite for you the different food groups, but do they think about which ones they're eating during the day? If you show them how powering up with healthful foods will help them ace that test in school or play a better soccer game, eating right becomes more important to them. Give Kids Easy Kitchen Tasks One of the simplest ways to get kids started in the kitchen is to give them some easy tasks. Next time you go to make dinner or a meal, stop and think of what your kids can do to contribute. Be sure to let them know how important their efforts are to getting the meal on the table. The encouragement will help build enthusiasm for the task.

A Web site for and by professional food journalists Jan. 2, 2003 Dear Food Journalist: The Awards Competition showcases the best food writing, editing, newspaper food section, design and photography in the industry. The competition is open to anyone whose food stories appeared in 2002 in publications supported by advertising or general paid circulation, or in online format. This year’s competition includes two new categories: Best Food Feature Photography and Best Spot News Food Photography. Best Food Feature Photography considers a photo or group of photos published in newspapers or magazines that tell a story other than a breaking news event. It can be a portrait that reveals the essence of the subject’s character; a pictorial made for scenic or artistic value, or a photo illustration style for a particular story or concept. Best Spot News Food Photography is for photographs or groups of photographs published in newspapers or magazines of an unscheduled (no opportunity for planning) food news event or happening. These are photos that are taken on real-time that require no styling and are not produced in a studio setting. Please make a copy of the rules and entry form for photographers at your publication.

I’ve lived through Julia Child as the “French Chef,” the Galloping Gourmet, Dr. Stillman’s high-protein, high-fat diet; Dr. Ornish’s low-protein, low-fat diet; Dr. Atkin’s high-protein, high-fat diet, phen-phen, diet herbs, hippie commune food, macrobiotics, “Northern” Italian, Nouvelle Cuisine, New American Cuisine, no cafes, grand cafes, the bistro boom, the coffee boom, beef Wellington, fondue, quiche, crepes, blackened everything, the fajita fad, chocolate mania, raspberry vinegar, sherry vinegar, balsamic vinegar, sun-dried tomatoes, the invention of the food processor, the discovery of Teflon., and, currently, yet another bistro boom.
    And I’m still here.

The "sloppy Joe" mixture is made from ground beef and barbecue sauce, browned first. Older kids can help here, but with supervision, since the stove is used. But everyone can help press the biscuits into muffin pans, fill with beef and put cheese strips on top. Serve with cut-up fruits and raw vegetables, and your meal is quickly ready.

Vegetables with a Holiday Twist POSTED: March 23, 2003 Some Like It Hot One of Port Jefferson's best kept secrets is a small store in Harbor Square Mall called Pepperheads Hot Sauces. If you ever wanted to know about the wonderful world of hot, hotter, and hottest, this is the place to explore. It's wonderful owner Harry Turner can take you on a tour of the world and back. He also has a line of Watkins herbs and mixes, a company that has been in business since the 1890's. These are vanillas and puddings and dips. There is a lot of history to be learned here and it's just plain fun. Because my cooking style, if not exactly hot, runs to "taste excitement," I am a patron of this store. Here are two of Harry's favorite recipes. As he likes to say, "may the sauce be with you!" Walter McIlhenny's Chili (or you could call it "Tabasco Chili") Ingredients:
  • 1/4 cup vegetable oil
  • 3 pounds lean beef chuck, well trimmed, cut into 1-inch cubes

By Nigel Slater (Fourth Estate) R159.95
I would buy this book for the photographs alone. Any art director will tell you that food photography is notoriously difficult to do well, yet Jonathan Lovekin's pictures here make you want to suck the pages. They're a brilliant illustration of Nigel Slater's exuberant, passionate style. More of a manual on eating well than an actual recipe book, he writes with such relish that it's infectious. He's a butch Nigella, a grown-up Jamie and I reckon the best of the lot. Even Jamie calls him "a bloody genius". The Food Of China
By Deh-Ta Hsiung and Nina Simonds (Murdoch Books) R175
As big and glossy as coffee table books, for the price of a couple of paperbacks, The Food of cookbooks are visually splendid but immensely practical, too. Following on from France and Italy comes China. Once again, recipes are interspersed with geographical and cultural information, history and tradition. Dim sum from Hong Kong, Peking duck from Beijing and char siu pork from Guangzhou are some of the famous dishes, but there are many more that will have you reaching for a wok, and with Chinese supermarkets springing up all over South Africa now the ingredients are readily available.

After a year of cooking, baking, garnishing, waiting tables and taking lessons on theory and kitchen hygiene, we had to get ready for our final practical exam. Each of us was required to create a menu for a three-course meal. We had to order the ingredients, calculate the cooking time for each dish, decide which parts could be prepared first, prepare the meal, set an attractive table - all under the critical eye of a qualified chef from a prestigious restaurant. It was nerve- racking enough to do all that for our own teacher, but having to do it in front of a total stranger sent me into a tizz.

    Expand Lent options with lentils
Angela Stephens Gannett News Service Mar. 12, 2003 12:00 AM This month, many Christians begin celebrating the season of Lent, which for some faiths calls for fasting or abstinence from meat. Families who typically prepare meat-centered meals might take a closer look at vegetarian menus for easy, satisfying new dishes. You don't have to purchase vegetarian cookbooks - unless, of course, you want to - in order to find recipes. Many wonderful vegetarian casseroles, stews and soups can be found in cookbooks you might already own. Searching the Internet also is a good idea. But for now, we're looking for something that tastes good and is easy to prepare on a hectic weeknight. Soup is the perfect answer. Some good choices include: Try this lentil minestrone from Deborah Madison's cookbook Vegetarian Cooking for Everyone (Broadway, $40). The dark richness of the soup gives the appearance and taste of a hearty beef broth.

Headlines News Archive Weather Features ... Reference Enjoy the harvest of an Orkney spoot ebb Yes, catching hold of spoots can be a tricky business and I am certainly no expert. Some people lure them to the surface by sprinkling salt into the holes they leave in the sand. Everyone knows the cardinal rule when frying spoots, do it quickly. If you go for the long, slow method, you risk ending up with something the texture of a garden hose pipe. Incidentally, spoots can also be steamed or cooked in a sauce. It is a matter of taste how much of the spoot you eat. Some eat only the smooth part (the fruit), while others eat the entire shellfish minus the stomach sac. I know one Sanday man who devours them in true macho style, that is, raw and straight from the ebb.
(Serves two as a light meal or starter)
    • Ingredients: 16-20 spoots (fairly small size); 2 tbsp olive oil; 2 cloves garlic, crushed; 2 red chillies (medium hot), finely chopped; salt and freshly ground black pepper. Method: Pour boiling water over the spoots and, when they open remove them from their shells. Discard any that refuse to open. Cut off the fruits and discard the remaining parts.
