NATIONAL SCHOOL LUNCH
The National School Lunch Program (NSLP) is the oldest and largest of the Child Nutrition Programs, celebrating 50 years in 1996. It is a federally assisted meal program that provides balanced, low-cost or free lunches to thousands of children in Colorado each day. Since 1946, the National School Lunch Program has made it possible for schools to serve appealing lunches designed to meet the needs of children. In recent years, concerns have emerged regarding the overall nutritional content of school meals. These concerns address findings that the diet of Americans has changed from being low in nutrients and adequate in calories to containing an overabundance of calories, fat, saturated fat, cholesterol and sodium. At the same time, Americans eat too few grains, fruits and vegetables. A good diet can help to reduce the occurrence of chronic diseases and promote good health and well being. The USDA School Meals Initiative for Healthy Children underscores our national responsibility to provide healthy school meals that are consistent with the Recommended Dietary Allowances (RDA) and the Dietary Guidelines for Americans.

INTRODUCTION AND PHILOSOPHY
The impact of current nutrition practices in health and disease cannot be overstated. In the past fifteen years we have seen a literal explosion of information in this field. Nutrition has become part of the consciousness of the American household, where over-consumption and malnutrition are the cultural patterns. Food production from the farm to the table has been based on profit, consumer convenience and taste. The excessive cost of poor nutrition has become a national concern and a significant factor in the exorbitant cost of medical care. Clearly there is a burgeoning demand in the public sector for sound nutrition information and natural remedies as opposed to drugs, especially in the areas of anti aging and preventative medicine. Our answers lie in good nutrition, the cornerstone of health and vitality.
"Long overdue, a curriculum that combines traditional concepts with new, innovative thinking." Marsha H.
"I am finally learning to articulate long-standing intuitions regarding health and food." Andrea W.

Launching Colorado on the Move™ : A Comprehensive Effort to Increase Physical Activity
Public Health Problem
Evidence That Prevention Works
Research has demonstrated that preventive measures such as improved nutrition, tobacco cessation, increased physical activity, and early detection and intervention may prevent heart disease, stroke, and other chronic diseases. Physical activity helps to control weight; contributes to healthy bones, muscles, and joints; reduces falls among the elderly; helps to relieve the pain of arthritis; reduces symptoms of anxiety and depression; and is associated with fewer hospitalizations, physician visits, and medications. Program Example Through a partnership with the University of Colorado Health Sciences, the Colorado Physical Activity and Nutrition Program is implementing two community interventions in Peetz, Colorado, which has a large rural population, and in the Denver Metro Black Churches, which allows program coordinators to work in an already established urban and African American setting to reach high-risk populations. These interventions focus on a physical activity component to encourage participants to walk 2,000 steps a day more than they walked before the program. Pedometers are offered to assist participants in their efforts. Additional worksites and community sites throughout the state are also participating. The intervention will introduce a nutrition component as well, most likely promoting a 5 A Day campaign. The program has been named

Evaluating Nutrition Programs
Nutritious diets are related to reduction of disease and the improvement of health and well-being: 35% of cancer deaths are linked to diet (U.S. National Cancer Institute estimate, 1997 ).......... The best way to help lower your blood cholesterol level is to eat less saturated fatty acids and cholesterol, and control your weight (The American Heart Association, 1997)........... As a result, many nutrition education programs have been developed. Goals of these programs are often to provide information and ultimately to change participants' dietary behaviors.
