By doing a couple of quick switches: substituting egg whites for whole eggs and green onions for yellow (green onions don't have to be sauteed in butter to make them tender), we can drastically reduce fat and cholesterol levels without sacrificing flavor. By incorporating a few other sleight-of-hand maneuvers like using low-fat milk, less salt, and cutting back on the oil for frying, we can have our crab cake and eat it, too. I use a potato pancake recipe that can be baked in a very hot oven. At the moment, I cannot locate the recipe but it was by Steven Raichlen. He calls his method "bake-frying" and for this method to work, you need to make the kind of pancakes that are a bit on the thin side. Heat a cookie sheet in a hot (over 450 degrees) oven for about 5 minutes. Working quickly, spray cookie sheet with cooking spray and form thin pancakes. Bake 5-10 minutes minutes then spray tops and flip over. I wish I could give a more exact recipe or method but I'm hoping that the idea is enough. One real benefit is that you do not have to stand in front of the stove making small batches. jayne p.s. You could consider this to be related to those cornbread recipes that call for putting the batter in a preheated pan so that a crispy crust forms on the bottom.

  • 1 pound crabmeat, chopped 1/2cup chopped red peppers 1 bunch scallions, chopped 1 egg 3/4 cup light mayonnaise 3 tablespoons Worcestershire sauce 1 tablespoon garlic paste 2 ears of corn on the cob, roasted and scraped 1 teaspoon Old Bay Seasoning 1 teaspoon Tabasco sauce 1 cup fresh bread crumbs 1/2 cup dry breadcrumbs 1 tablespoon vegetable oil
Note: Commercially packaged crabmeat is usually of the blue crab variety and is available in several grades. Lump is the best kind as the meat is in large pieces with no fragments of shell. Like most shellfish, crab is very low in fat and modest in calories.

Horseradish sauce:

Pour butter and water in saucepan and place on front of range. As soon as boiling-point is reached, add flour all at once, and stir vigorously. Remove from fire as soon as mixed, and add unbeaten eggs one at a time, beating, until thoroughly mixed, between the addition of eggs. Drop by spoonfuls on a buttered sheet, one and one-half inches apart, shaping with handle of spoon as nearly circular as possible, having mixture slightly piled in centre. Bake thirty minutes in a moderate oven. With a sharp knife make a cut in each large enough to admit of Cream Filling. This recipe makes eighteen small cream cakes. For flavoring cream filling use lemon extract. If cream cakes are removed from oven before being thoroughly cooked, they will fall. If in doubt

Ingredients

1 kg potatoes
1 onion (medium)
2 eggs
3 tbsp flour
A pinch nutmeg (jaifal)
1 tsp salt ½ tsp baking powder Butter for cooking Method Peel and finely grate the raw potato and onion into a bowl and leave them to stand for about 10 minutes. Drain off any liquid which collects in the bowl. Add the eggs and other ingredients to the same bowl and beat well until smooth. Melt a little butter in a heavy frying pan and heat through evenly. Drop the batter, in spoonfuls, into the hot pan and fry for about 2-3 minutes. Turn the cakes and further fry for 2-3 minutes, until golden brown. Drain well on kitchen paper or tissue paper. Garnish with coriander leaves. Serve hot with tamarind chutney or green pudhina chutney. This recipe was contributed by Smriti Shiva.
