For 300 years, feijoada has reigned supreme in the Brazilian kitchen. Invented by slaves, who started mixing their masters' pork leftovers to the black beans that were used to feed the animals, it got a touch of Portuguese and Indian cuisines and today is served all over from the hole-in-the-wall little joints to the most sophisticated restaurants. And every family seems to have its own feijoada favorite recipe.

    I may not be a total expert on Brazilian food, but I know my way around a kitchen fairly well and I am able to make people come back for more and more when I cook Brazilian dishes and I know it's not because my guests and family are being polite that they do so! One of my specialties is feijoada completa , Brazil's national dish. The actual origin of the dish is essentially African, but popular belief has it that it evolved from a combination of sources, from the African slaves, to the Portuguese colonists, to the indigenous Indians. Onion Chile-Cheese Appetizer
Recipe Based on: ; Dave Dewitt, et al;
Servings: 12
2 Medium Red Onion thinly sliced
2 Large Malagueta Chiles or piquins, chopped
3/4 Cup Sour Cream
1/2 Teaspoon Lime Juice
12 Shells Puff Pastry Shells
6 Tablespoons Parmesan Cheese grated
Salt And Pepper to taste
Combine onions, with chiles, sour cream and lime juice. cover and refrigerate. bake the puff pastry according to package directions until 3/4 done. then remove from oven. let the pastry cool on baking sheet. then evenly spread onion mixture in each shell. sprinkle cheese, salt and pepper over each. place the pastry lid on each shell and finish baking until the shell is light brown.

      A Taste of Brazil By Chantal Lamers Hardly anyone has time to travel to exotic countries these dayswhere one can sit back, relax and sink one's teeth into exotic cuisine. So in addition to his nine-to-five job, Glenite Salah Al-Ayube spent two years attending the culinary academy so he could bring a little taste of Brazil to the Bay Area. Al-Ayube opened Nabraza, (which means on the grill) earlier this month, at 2523 Winchester Blvd. in Campbell. It wasn't Al-Ayube's lifelong dream to open a Brazilian restaurant. His three siblings and he were taught to cook, clean and sew at a young age. By the time he was 12, his mother made sure he cooked two meals each week. He developed a lasting love for cooking. Al-Ayube who grew up in San Jose, graduated from San Jose State University with degrees in biochemistry and industrial engineering. Al-Ayube worked at NASA before taking a job as a chief software architect with Microsoft. He enjoyed his career, but began to daydream of opening an authentic Brazilian restaurant. One evening, while he was staying in a Washington State hotel and watching television, a commercial someone standing in front of an empty storefront. Suddenly, that storefront turned into that person's own business. The idea stuck with Al-Ayube, and he shortly began researching how to make his grill into reality.

Waves of new arrivals from Asia, Western and Eastern Europe and the Middle East brought kitchen traditions with them that put a truly eclectic spin on Brazilian cuisine. Almost as if to complement its exciting geographical contrasts, from wetlands to tropical forest to beaches, it also boasts an incredible multi-ethnic mix, which is mirrored in its cuisine. Ancient Times and Influences The indigenous Tupi Indians had already mastered the art of preserving meats through smoking and drying by the time the Portuguese colonised Brazil in 1533. They had developed the use and processing of Corn (in particular Corn Porridge) as well as the use of many root vegetables such as sweet potato and manioc (also known as yucca or cassava ). Not only did the Portuguese bring with them their own culinary customs (heavily influenced by 300 years of Moorish occupation) but they also imported slaves from West Africa with their cooking traditions. The use of coconut milk, peppers and dende (palm oil) are amongst the many ideas introduced by the slaves, all of which are prevalent in Brazilian cooking. Many more immigrants followed later, including Western Europeans, peoples from the Middle East and Asia, but unlike the Portuguese and African traditions, their culinary contributions were absorbed rather than evolved.
