Here are a few new flavors to try: "The Food of Asia" (Periplus, 2002, $22.95, large format paperback), by Kong Foong Ling, is a varied collection of more than 300 recipes, attributed to top chefs, drawn from all the major Asian countries. The book's first attraction, before anyone even thinks of going to the kitchen, is visual, its wealth of color photos. Food photos by Luca Invernizzi Tettoni focus on dishes and ingredients. Other photographers contribute location shots, views of countries and regions, chapter by chapter, and vignettes that introduce you to their people. Dishes are given both local and translated names Asam Laksa Penang, is Sour Penang Noodle Soup, from Malaysia. In the Indonesia section, Kenus Mebase Bali is explained as Balinese Squid, prepared with lime juice and chilies among other seasonings.

AFRICAN VEGETARIAN STEW
4 sm Kohlrabies, peeled and cut into chunks
(chick-peas) with liquid
1/2 c Couscous -or- Bulgar Wheat
1 lg Onion, chopped
1/4 c Raisins, dark or golden
2 Sweet Potatoes, peeled and cut into chunks
1 ts Ground Coriander
1/2 ts Ground Turmeric
2 Zucchini, sliced thick
1/2 ts Ground Cinnamon
5 Tomatoes, fresh -or- 16 oz Can Tomatoes 1/2 ts Ground Ginger 1/4 ts Ground Cumin 15 oz Can Garbanzo beans 3 c Water Combine all the ingredients in a large saucepan. Bring to a boil, lower the heat, and simmer until the vegetables are tender, about 30 minutes. Note: Serve the couscous separately, if desired. Parsnips may be substituted for the kohlrabi. Sweet Potato Pie 2 c Sweet potatoes, drained 4 T Margarine,melted 3 Eggs 1 c Sugar 1 tsp Cinnamon 1/4 tsp Grated nutmeg 3/4 c Milk 1 tsp Vanilla 1 9" pie shell, baked 1/4 c Chopped pecans Use a food processor or fork to mash sweet potatoes together with melted margarine.Blend in eggs,sugar,cinnamon and nutmeg. Add milk and vanilla.Pour mixture into baked pie shell.Microwave on 70% (medium high) 7 minutes. Sprinkle pecans over surface of pie.Rotating midway through cooking,microwave on 70 % (medium high) 6 to 8 minutes or until center no longer jiggles. If you prefer, you can bake it in the oven at 375 degrees for about 35-45 minutes or until it doesn't jiggle. Yield: 8 servings
Grandmother's Southern Fried Okra Heat oil in 10 inch skillet over med. heat until hot. Oil is ready when dash of cornmeal sizzles.
Spoon mixture evenly in skillet. Reduce heat to med low. Cover and fry till underside golden brown, 10-15 minutes. Then invert on plate and slide otherside up into skillet and cook uncovered 5-8 min until golden brown. Remove from skillet to paper towels to drain excess oil. Serve hot.

Meat and Black Bean Stew (Feijoada)

Originally created from pork odds and ends by Bahia's African slaves, this delicious rice-and-bean combination has been elevated to Brazil's national dish. In Rio and Sao Paulo, a multifarious buffet of roasted and boiled meats accompany this rice and beans. This version is adapted from one made by Valmor Neto at his San Francisco restaurant, Bahia Brasil. Particular attention has been paid to reducing the salt and fat of the traditional dish.
You don't need to include all of the meats. Pick out the ones you like best and add them. If you leave them out altogether, the dish becomes simply black beans, to which you should add extra onions, celery, peppers, and other spices. I like to pass a clove or two of garlic through a press into the beans about 5 minutes before serving, to bring up the flavor.
Serve bowls of Farofa on the side to sprinkle over the beans. Feijoada is also served with Arroz a Baiana, Couve, Cracklings, and Molho de Pimenta.
2 cups (1 pound) black beans , rinsed and picked over
3/4 pound pork butt or shoulder, trimmed of fat

... click here for this month's table of contents It's early morning at the Jade Buddha Temple in modern, bustling Shanghai. The faithful arrive in the central courtyard, ignite bundles of incense and send their prayers heavenward. The devoted bow, raise the incense sticks many times over their heads, then move among the saffron-robed monks to meditate in the large chambers that house statues of the Jade Buddha and the Reclining Buddha. As the worshippers finish their prayers, many stop at the small ground-floor restaurant in the temple for a bowl of noodles and vegetables in broth. Because most observant Buddhists fast before praying, this broth serves as their breakfast. At smaller, more rural temples, the monks themselves prepare and serve these noodles, which represent a kind of communion, or a sharing of the holiness the monks represent. This food is always vegetarian because one of the main tenets of Buddhism states that killing is wrong. Buddhism-and with it, vegetarianism-is a growing force in the new China. Old monks, who scattered and were persecuted during the Cultural Revolution of the mid-20th century, once again reside and meditate in the sacred buildings. Allowed to practice their faith, older Chinese are returning to the temples and eating vegetarian meals at least several times a week. Young people, many of them university students, go to the temples looking for spiritual ballast in their lives. When they find it, they also find a new-yet very old-way of eating.
