I agree with the author above but I do believe the recipes are superb and the author is quite a well-respected authority on Greek cooking in particular, as well as the Mediterranean as a whole. Her pepper referneces are not very detailed, it's true. I think professionals still speak to laymen as somewhat simpleminded and in this case, I am a professional. I do think the home cook will find these recipes quite executable and reliable, which is more than I can say for chefs as Batali that always leave a very pertinent ingredient and or step out of the recipe, so your final result will never be as good. This is despicably miserable and stingy. Miss Kremezi does not do that. Like most Greeks, she gives her all. A deserving James Beard Award winner (though not for this book).

I picked up this book on a whim (a cookbook weakness moment...you know what I mean if you love food and cooking).Sometimes single subject cookbooks can be risky--you'll find only one or two recipes that would blowyour skirt up, so to speak, but I've enjoyed many of the recipes I'veprepared from this book and those that I haven't are on my 'to do' list. The issue of 'hot'is alittle vague here.The author mentions 'chilepeppers' in many of the recipes but does not tell you the preferredvariety...hence the 3 star rating.As a 'foody', I particularly enjoyedthe historic references to the origins of dishes--I made a dish fromancient Byzantinum last night.It discusses the use and history of spicyfoods in the Mediterranean. This is not a food essay book--and, dependingon your view of those types of books could be good or bad (for me theirgreat if that's what I am expecting but if I want recipes--eeek!)This bookgives you a brief history of the dish followed by an easily understood andfollowed recipe plus sources for weird ingredients.By the way--not allthe recipes are killer hot--it depends on the pepper you use and yourdiscretion with the recipe chosen.In a search to break away for theordinary and incorporate healthier Mediterranean foods into diet take alook here. ... 4-0 out of 5 stars Turkish Culinary Delights Even for the Non-Traveler
I took a road trip through Turkey several years ago and enjoyed having Turkish pizza (lahmacun) when the bus made a meal stop. Pizza there does not consist of the unique and sometimes absurd toppings one gets used to here with plenty of melted mozzarella and tomato sauce over a heavy crust. In Turkey, pizza is made up of a smaller and crispier round of dough covered in ground lamb, onion, chili, parsley and olive oil. It's a basic dish but very satisfying. As Australian-based food writer Dani Valent points out, the mark of a good Turkish cook is not creativity; it's skill. You don't experiment with what already tastes good. You just enact it to the best of your abilities. That's the philosophy behind Turkish cuisine.

Thanks to the author's zeal, Turkey comes alive through its food in this small tome, one of the many country-specific entries in Lonely Planet's series of fine, pocket-sized "World Food" books. Any traveler worth his or her salt knows the best and easiest way to get to the heart of a country is to experience firsthand the culinary delights that country has to offer. This book would be an invaluable guide to anyone visiting this surprisingly robust epicurean center as she covers the vast landscape of food and drink there. Valent moves fluidly from the culture and history of Turkish cuisine through the staples and specialties you would find in a Turkish kitchen to the nuances of regional fare, whether it's the heavy influence of the sea in the Aegean and Black Sea regions or the wheat-based dishes of Central Anatolia.

I particularly like the sections that focus on celebrating with food and the delicacies you find in street kiosks. Obviously not all the food is meant to be savored by everyone, but this provides a comprehensive, easy-to-read guide to the variety of tastes and sensations to be experienced including a definitive culinary dictionary, a quick-reference glossary and useful phrases when you order food and drink there. Valent includes recipes for delicacies like chicken breast pudding and stuffed grape leaves, city maps highlighting favorite eateries, and special insets on highlights like Konya's whirling dervishes, Bosphorus fish sandwiches and of course, Istanbul's world-famous Spice Bazaar. If Valent's knowledgeable prose is not enough, the wonderful photographs should convince you. Whether you are visiting to Turkey or content as an armchair traveler, this is a guidebook worth seeking out.

2-0 out of 5 stars The writing gets very old very quickly.
This guide disappointed me on our trip to Istanbul. the pictures are good and it does provide a lot of useful information about the kinds of food available and the cultural food habits of the Turks.However, the writing is bad. If you don't mind bad writing, then buy the book. Here's a sample sentence:
"The Turkish version of the pizza parlour is a slice of heaven if you're after quick and tasty belly fuel".
On the next page, there is a reference to "a between meal carbo tweak" and then later, "McWhoppers",These phrases and made-up words get old quickly when you are trying to read more than a page or two at a time.

If this doesn't bother you, then by all means, buy this book. If it does, read up by checking out a Turkish cookbook and your guidebook (like LP's Istanbul guide).
I think the author was trying to have fun but it gets old quickly. Call me old-fashioned, but I think it is better to keep to words that are in the dictionary.

I have this book (a friend bought it for me from Amazon). It's quite good, detailed, with lots of great pictures. A definite must-buy for someone who wants to offer someting different to himself or his guests.
BTW, about the "Editorial review" : Swig of "raki"????!!! for everyone to know, "raki" is a traditional Greek drink (particularly coming from the Island of Crete-I should know I live on it), made by distilled grape juice every September to end of October. Turks took this drink and use it (while been in Greece for 400 years), but it's not traditional Turkish in any way... plus the fact that Turks are Islamists and thay are not supposed to drink... right???

This cookbook leaves a lot to desired. It leaves out some of the most common variations on Turkish food and is a lot more historical information than necessary. It is an ode to the history of turkish cuisine but is not that useful in the cooking aspect of modern turkish favorites. It lacks basic cooking methods and does not inform people how things are eaten or accompanied.

This is by far the best Turkish cookbook written in English that i have come across. i have been using it for years with great results. i have recently ordered a second copy for my daughter who will soon be leaving for college.i wholeheartedly recommend it to all who are looking for a good source book on Turkish cuisine.

Love this cookbook, have only had Turkish food in America, but had some visuals and wasn't hindered by the lack of photos...have prepared multiple meals for family & dinner parties and always recieve rave reviews from 5 year old American children to adults who have actually lived in Turkey...Have made the Kofte w/ Lamb, Beef, Veal or even ground turkey (no pun intended)...all are delicious!

I am American and my husband is from Turkey, so I wanted to get some good books on how to cook him the foods from his childhood.These had to be authentic...no mediocre recipes would suffice.I reach for this book all the time and have marked a great number of recipes because I turn to them time and again. There hasn't been a single one I've tried that my husband hasn't loved, which is all the proof I need!Some criticisms are that the book has no pictures, which would help to visualize how the finished dish should look, and there are some recipe omissions that even I as a layperson would have liked to see.All in all though, one of the best Turkish cookbooks around. ... I recently returned from a wonderful trip to Istanbul and the Cappadocia Region of Turkey and wanted a good cookbook that included recipes of the excellent food that I sampled.I went to my local bookstore and found Turquois, which included pictures, recipes and stories of Turkey - exactly what I was looking for.However, the book was pricey.Amazon had the book at an excellent price.The book is simply beautiful, with authentic Turkish recipes.Highly recommended.

You spend the morning in the souk, window-shopping for gold bracelets and rugs.You pass by fruit and spice stalls.You can feel the scents of cardamom and rosewater begin to soak into your cotton shirt.You stop at a café and order a small, strong, sweet coffee and listen to the storyteller on the dias entertaining the crowd.You order a small, exquisite milk pudding, sprinkled with almonds and pomagranite seeds like little gems....

Greg and Lucy Malouf are your traveling partners as you peruse the vibrant, healthy cuisines of Turkey.You couldn't ask for better guides.The Maloufs travel all over Turkey and introduce you to regions and cooking styles you've NEVER heard about.If you thought (as I did) that Turkish cooking was greasy lamb, gooey Turkish Delight and bitter coffee, you couldn't be more wrong.

Aside from the recipes, this book is positively riddled with drop-dead photos--of people, regions, food, markets.And always the sea, as Turkey's almost surrounded by water.One photo in particular looks almost like an Orientalist painting: a young Istanbul man in a white kaftan and fez powdered in flour, holds the delicate sheets of phyllo he's rolled.It's as if hestepped out of the kitchens of the Seraglio a hundred years ago.

What's more, along with recipes for kofte and puddings, cookies, delicate chicken, beef and lamb recipes, The Maloufs have narrated a fascinating journey through the Homeland--vendors, chefs and housewives are pumped for advice and directions to the ferry.It reads like a novel.Enchanting.

The book's huge and heavy enough to hold a bank vault door open.But you'll never use it as a doorstop--it's so colorful, helpful and entertaining that it could happily sit on your coffee table, thrilling guests forever.

I gave this book as a present to several of my collegues and they all loved it. I think a book about Turkish cuisine will be insufficient as long as you do not tell something about the culture behind it. I think this book does that nicely.
The quality of the print and the way the photos were picked is appropriate for a book of this price.

I am avid cookbook collector and user, but am rarely moved to write reviews.I have also had the pleasure of visiting Istanbul and experiencing first hand the wonderful cuisine.Turquoise far surpassed my expectations.It is hard to know what pleases me more - the excellent collection of recipes presented with clear, easy to follow instructions or the amazing photographs and descriptions that place the recipes in their colorful contexts.It is definitely one of the gems of my collection, one which I would recommend highly both to someone looking for a gift or to treat themselves.

I didn't know much about Turkish cuisine before buying this book, other than that it's supposed to be really good. This book is an excellent book, the recipies are very clear and easy to follow, the pictures are wonderful and very colorful (which helps when you need to know how your final product is supposed to look like- particularly for novice cooks), the recipies are contextualized with charming anecdotes and helpful hints, and on top of that I got this book within 3 days after I ordered it. I am not a hunter. I won't even step on a spider, and open windows to let flies out. But as a food writer I am a big fan of game - both wild and farm-raised. Just don't ask me to catch my own. The new book, "WildAbout Game" by Janie Hibler, is a cookbook plus more. My mother is Turkish and I've been eating Turkish food forever---as well as many a trip to Turkey and my Turkish family and friend's homemade meals.This book truly captures the traditional flavors and dishes that you will find in any Turkish household and restaurant, without the complication that should not exist.As one reviewer stated, you may not find loads of spices and difficult recipes, but that is NOT Turkish cooking anyhow.They like to make many dishes at once and you want to taste the true flavors of the food, and this book will help you do that.Beautifully illustrated as well.

I bought this book to add to my collection; my hobby is Turkish cooking and I thought from the reviews it sounded rather worthwhile. My overall verdict is 'it is & it isn't'. There are some useful & interesting desert recipes in here, and a few vegetable ones as well. I found the rice, main dish & fish recipes rather disappointing - rather of the meat & 2 veg. style of British cooking I guess.
I think if you're a beginner, interested in simple dishes that are easy to make & with no hard-to-find ingredients, this could be an interesting the book for you. It reminds me very much of the Turkish working-people's cafe-style food which is simple & no-nonsense. The book is certainly authentic; there are lots of typo's & the photography is a little lacking. The writer explains things simply & in an easy to follow way. I have made many of the dishes before & the recipes have very little capacity for things to go wrong! However, they are a little bland for my taste - most recipes use only salt & pepper as seasonings & I prefer at least a few herbs here & there.
If you're looking for a book which is beautiful as well as functional, I'd go for Ozan Ozcan's 'Sultan's Kitchen'. If you want a basic 'how-to' book of authentic dishes to get started, Inci Kut's book might be a good option. However, I'd actually recommend the best cookbook of any style of cooking I have ever bought, one from which I have made almost everything and which I've used almost every week for years; 'Turkish Cooking' by Gulseren Sancakli & Margaret Oliphant. This is a small, cheap book, maybe a little hard to find now, but every recipe in it (apart from the Wedding & Yoghourt soups) are absolutely infallible. I'd definitely give that one a 5.

I'm at a military base and just married a Turkish woman.Since Turkish people live at home until they marry (her mother does most of the cooking), we've been looking for good recepies of Turkish food.I found this book in the base library.

It's a great book and the recepies seem authentic - even the Adana Kebab (we're near Adana).Instead of copying half the book that my wife wanted the recepies, I'm just buying it instead.

I would recommend this book to a friend.

I purchased the Wednesday book in this series ("Wednesday is Spaghetti...") based on the recommendation of a friend. I liked that book so much that I started getting the rest of the books in the series. This book, along with the others, has a lot of great ideas and the recipes are not overly complicated. I would recommend any of the books in this series.

I picked up Tuesday is Chicken a few years ago, and I've been using it all the time since. In fact, I loved it so much that I went out and bought the rest of the series!

Most of the recipes are uncomplicated & many use ingredients you probably have on hand. This was the first Turkish cookbook i bought & used upon my arrival to Istanbul, specifically for its very useful Turkish & English versions of the recipes, which helped me to learn all the Turkish food terminology and is the best feature of this book.There is a good mix of authentic home dishes and a few contemporary ones which are not Turkish, but are enjoyed here. I still continue to use it and I like the clean contemporary photography and presentation of the dishes, which is different from most of the Turkish cookbooks available.
Most of the recipes I have tried came out well, however if you are new to cooking, there is sometimes a lack of specific cooking instructions/direction given. For example, Zeytinyagli Yaprak Sarmasi is a classic meze seen everywhere in Turkey. If you have never made this before, Ms. Zorlu's instructions to "lightly boil the grape leaves" is not specific enough to explain how long you need to blanch them, and my first batch came out too soft, which is a shame given how labor intensive this dish is.it would also be helpful to have a better explanation of how to roll them.In Turkey, you would be shown how to make this by your mother, so this book needs a diagram of where to place the filling & how to fold the sides, etc.The same issues occur in Cold stuffed cabbage where it just says to "boil & drain the green leaves".And for Russian salad, which starts out with "peel & dice the boiled potatoes", most recipes would at least mention to "boil the potatoes in their skins until tender, drain & cool" as a first step.Perhaps in her home kitchen and from years of making these dishes, such explanation is not necessary, but for a beginner cook it is.
I also still don't know what "seasoned salt" is - an explanation would be helpful for those outside of Turkey.Since this book will be purchased byEnglish speaking cooks, the publisher really should have provided a professional recipe writer to make sure the English recipes are up to standard. ... I would highly reccomend this cookbook to anyone wanting to learn about Turkish cooking. I was in Istanbul recently and the local book store wanted over $100.00 USD for it.My girlfriend and I took a cooking class our last night there and when asked about a good cookbook the owner/chef pulled this one off the shelf. It's a beautiful cookbook with great recipes and beautiful photographs.You won't be dissapointed.

I ordered 12 copies of the version for $14,00 listed as a remainder, for gifts and was astonished to see that the book was a hardbound reprint from 2009, absolutely new and in great condition, no sign of a remainder stamp or anything similar - just a reprint of thefabulous cookbook I had bought years ago in Istanbul and used often - great, authentic recipes. I have a number of Turkish cookbooks - this is by far the best.

Don't skip over the wonderful "Introduction" and "Essential Elements of Turkish Cuisine" before you start to use this book.Classic Turkish Cooking presents a wide variety of Turkish dishes, with generally good directions and clear photos of finished products.Don't let the "aubergine," "minced lamb" and "sponge" hold you back - we can all figure out what those are - right?But I must admit I'm not exactly sure what "beef scraps" are - or "strong unbleached flour."No matter. Just plunge in and try these excellent recipes.Most of the more unusual ingredients can be found in a Middle Eastern market or Indian market. An excellent book for those who like Turkish cooking - and who doesn't?

I had only tried a couple of Turkish recipes before buying this book, but this book made me absolutely fall in love with Turkish cuisine. The beautiful photos and descriptive narrative backgrounds accompanying the recipes make the food come alive even before you've bought the ingredients. As with any ethnic cuisine, one has to be prepared to make substitutions for hard to find ingredients, but with a little creativity there isn't a single recipe that is off-limis. The Imam bayildi recipe is just to die for and it's become a household favourite. I've got a slew of cookbooks gathering dust on my kitchen shelves, but this is one I keep coming back time and time again, especially when I want to serve something really flavourful and visually impressive. But it's great for one-dish everyday meals, too. I couldn't recommend this book more highly!

This book has an interesting choice of dishes and many mouth wateringphotographs. Most traditional widely known recipes and some local recipes I have never heard of before have been provided. However this book would not be my first choice of Turkish cookbook, there are more accurate ones. Some ingredients used in recipes are almost impossible to find and certain techniques are not explained well. So if you haven't seen someone cooking that dish before it is quite difficult to figure out how. If you have a few books on this topic already this book can be an interesting addition otherwise go for Ozcan Ozan's book. ... Read more

My partner and I got this cookbook as a way to start eating the "Mediterranean Diet".

Since then I have bought several copies and given them to family and friends.

I have yet to find a recipe that did not taste absolutely fabulous!!It stays in my kitchen on the bookstand ready to be used at moments notice.The other cookbooks are on the shelf.

Definately recommend this cookbook!!

Mediterranean food has had a huge impact on how the rest of the world eats. The previous review had criticized this book for focusing too much on the foods of a few particular countries, but I am sure that Williams-Sonoma did want this book to appeal to the average American consumer. The previous reviewer is correct that there are a lot of Spanish, French, Italian, and Greek recipes in this book but I in no way see that as a bad thing. These are the recipes and ingredients that I am most familiar with, and the foods I cook most of the time. I do realize that there are numerous other cultures and foods that are Mediterrean, and I would love to know how to cook them. Unfortunately, too often when I see recipes that require exotic ingredients or unfamiliar cooking techniques these recipes become "fantasy foods" - foods I would seek out in a restaurant in a big city but not actually cook at home on a regular basis. I would cook almost all of the recipes in this book and that is why I think it is a very good Mediterranean cookbook. Maybe ten years from now there will be numerous Turkish grocery stores and restaurants even in places like New Mexico - and that would be a great thing! And maybe at that time this book will seem ethnocentric and very limited in its scope. But for now I think this cookbook was very well done. The recipes are precise, tasty, and well-photographed like most other Williams-Sonoma cookbooks.

I was expecting a book with equal number of recipes from each country they mentioned on the cover...but what I got was a book filled to the brim with Spanish, Italian and French recipes with some middle-eastern recipes thrown in for good measure. I already have their Savoring Spain, Italy and France cookbooks and the recipes are mostly repeated here, so I am really disappointed. The only reason I'm giving this book 3 stars(instead of 1 that it deserves) is because if somebody doesn't have the cookbooks I mentioned, they might enjoy all the recipes here.

I brought a copy of this book to a friend's house at the beach and he used it countless times in one weekend. We made lamb burgers, salmon burgers, mango smoothies, iced tea, three pepper slaw, corn relish and even that heavenly dessert burger which was a perfect end to a summer bbq. The menus make planning a meal a no-brainer, from appetizers to condiments. This book is lovely to look at, easy to use and the only book you need for the beach house! I will bring it to every summer party or weekend away this summer. Substantial enough to be a gift but practical too. Heartily recommended for the amateur and the pro.
