5-0 out of 5 stars Andrew Jaeger's New Orleans Seafood
I love this cookbook.I had the pleasure of meeting Mr Jaeger at his restaurant in the French Quarter (pre Katrina). The stories and recipes exude the meals we enjoyed at that special place.

4-0 out of 5 stars authoritative insight into regional USA cuisine
The "how to" pages will help the reader pass oneself off in NOLA as a local; the recipes are obviously authentic, easy to follow, and bring back fond memories of my college days at Tulane and "Crayola" inthe early seventies.I learned how to cook in New Orleans.I studied themenus of the local restaurants, (Etienne's on Maple St) and this book is agod-send.Jaeger far surpasses some upstart transplant from New Jersey. Ten Speed Press should be complimented for bring such unknown, butimportant insights into our country's local cuisines. ... Read more

4-0 out of 5 stars My favorite seafood cookbook yet
This is one of the rare cookbooks where I can flip through and become excited about almost every dish.On top of that, here are some specifics about this book that I loved:

* There's a picture for every dish -- I don't know about other people, but I'm much more likely to try a new dish if I know what it should look like.

* For every dish, they have a sidebar discussing possible alternatives and substitutions.

* The dishes cover a wide variety of regions and cultures, including several that you just don't see in cookbooks that often.

* The book has a good general introduction with tips on cooking seafood in general, making it all much less overwhelming to those of us unfamiliar with it all.

* In addition to all the recipes for grilling, broiling, roasting, etc, that show up in every seafood cookbook, this one has some amazing recipes for seafood stews.

The only negatives I would have about the book are that 1) it isn't spiral bound, which I really wish all cookbooks would be, and 2) the chapter on sauteed and fried fish was less exciting than the others. ... Read more

Product Description

Whether you are one of the thousands who have already been converted to the wonderful flavors of Rick Stein's fish cookery, or have yet to sample them, this book contains over 150 fabulous recipes showing just how pleasurable, satisfying, and easy it is to cook with fish.
Amazon.com Review
Rick Stein, British TV seafood cooking instructor and seafoodrestaurant owner, wasn't able to get every recipe he loves into hisfirst book, Taste ofthe Sea. So he wrote Fruits of the Sea.

WhereTaste of the Sea was a kind of introduction to seafood cookingfor those a bit hesitant about trying different kinds of fish,Fruits of the Sea is more like Stein's launching pad. Heassumes he is preaching to an enthusiastic choir. Much of hisinformation is right to the point, and his style of instruction ismore refined. All the techniques for prepping different kinds of fishare described in clear language as well as illustrated in detailedphotos. Included, too, is a discussion of many of the unusualingredients Stein pulls into his recipes for that extra dash ofbrilliant flavor--preserved lemons, for example, or kaffir limeleaves.

It comes as little surprise, then, that Stein opens withrecipes like Basque Squid Stew, Moroccan Fish Tagine, Seafood in aCrab and Ginger Broth, and Mussels with Turmeric, Cumin, andCoriander.

He breaks his recipes into soup, stews, and clearbroths; light lunch dishes; hot and spicy fish; deep-fried fish;summer fish and salads; fish from colder climates; elegant fishdishes; quick and simple fish; hand-held and party food; and food tofinish with. As in the first book, you'll also find basic stocks andsauces and a list of alternative fish for the American and Australianmarkets. The user-friendly Fruits of the Sea will launchanyone, even a reader who may have been a bit reluctant to take theplunge, on a discovery of seafood. --Schuyler Ingle ... Read more

5-0 out of 5 stars Oh that Rick Stein !
Rick Stein and his 'Taste of the Sea' series ran on PBS (or at least on KQED, SF) a few years back, and we miss his slightly off-center humor and antics -- but especially his on-location recipes, often prepared with the characters who provided them to him. In addition to fun memories of the series, these recipes will give you many delicious meals to savor. A good read, and a very good cook book.

5-0 out of 5 stars Delightfully Simple
I rate cookbooks not on how they look, or even on how difficult they are to follow, but on how good the recipes taste. In this category, Mr. Stein excells. The food is delicious. His recipe for Tom Yam Gung is one of the easiest and best tasting recipes for this classic Thai soup that I have ever tasted. The wonderful blend of fresh seafood and asian spice is unbeatable.Highly recommended.

5-0 out of 5 stars Passion yet simplicity
Ideal for anyone who wants to cook fish but is either worried about how difficult it might be - or bored with the same old same old.Rick's passion and enthisiasm is contageous.

If you are like me - love seafood, andalways eat it in restaurants, but not sure about tackling it at home - thisis ideal.

Its a good read even if you dont want to cook!

5-0 out of 5 stars Enthusiastic, simple and delicious.
Rick Stein is not only a superb chef but his writing is clear, simple andenthusiastic - like his food. He gives plenty of tips from what utensils tobuy, to how to store fish and how to make excellant stocks. All the waythrough the book he carries you along with his passion and almost cooly, simplistic aproach. If you like fish - or even if you don't - I am sure youwill find this book rewarding, not only for the food but also theinteresting little tit bits he incorporates. ... Read more

Product Description
There are two thousand species of shrimp in the world, and the majority of the United States population has only just discovered what is now considered America's favorite seafood. Advancements in transportation and communication have brought the coastal delicacy inland in the last few decades, resulting in a surge of popularity nationwide. Even as the taste for shrimp has drifted farther away from its seaside origins, it remains a traditional staple in the Gulf Coast region. Coauthor and fisheries expert Jerald Horst provides a wealth of information about the shellfish, including biology, history, industry, and meal preparation.

Shrimping has been a commercial industry in Louisiana since the 1870s. Based on his scientific knowledge, practical experience, and more than four decades near the Louisiana coast, Horst's advice is valued among those in the industry. He expounds on the art and science of purchasing shrimp based on size, count, and weight. Recommending specific locations for stocking up during the season, the author warns against common misconceptions in choosing shrimp.

Along with his wife, Glenda, Horst is also adept at the art of cooking shrimp. The couple has included seventy-seven home-style recipes personally tested in their own kitchen. Molds, casseroles, gumbos, and salads reveal the variety of tastes that can be concocted from the small crustacean. Each recipe has been taken from residents of the Gulf, with four stars indicating the best of the best. ... Read more

Their Steak seasoning cannot be beat. Check out [...]

5-0 out of 5 stars Louisiana Seafood Bible
The information is fantastic. It answered all the questions I have had over shrimp in Louisiana as to what happens when and in what order. It also showed how to identify all the different species easily. I enjoyed the recipes in one place, the only one I missed is corn and shrimp soup
or chowder.

5-0 out of 5 stars Enthusiastically recommended for family and community library specialty cookbook collections
One of the most popular and edible products of the sea, there are more than two thousands of species of shrimp. Indeed, fishing for shrimp has served as a significant commercial industry in Louisiana from the 1870s down to the present day. Louisiana chefs and kitchen cooks have been experts in shrimp-based cuisine and now the husband and wife team of Jerald and Glenda Horst have compiled 77 mouth-watering recipes showcasing shrimp in molds, casseroles, gumbos, salads and more. Of special note is that "The Louisiana Seafood Bible: Shrimp" is divided into two major sections. The first are a series of chapters about shrimp including its history, commercial fishing, sizes, buying shrimp, canning shrimp at home, storing fresh shrimp, and more. The second section is devoted to the recipes themselves complete with ingredient lists and preparation instructions. Each recipe is guaranteed to be 'kitchen cook friendly', please any palate, and satisfy any appetite. Beautifully illustrated throughout, the recipes range from Shrimp and Mango Spinach Salad; Shrimp Fontenot; and Shrimp Louisiane Casserole; to Jacked Shrimp; Aloha's Barbecued Shrimp; and Gingered Shrimp with Pea Pods. A superbly presented compendium of shrimp oriented information and recipes, "The Louisiana Seafood Bible: Shrimp" is enthusiastically recommended for family and community library specialty cookbook collections.

5-0 out of 5 stars Taste tested and approved
All my life, my parents would test new recipes on the family in addition to creating seafood masterpieces passed down from my Maw Maw to my mother.I have stolen many of these recipes and claimed them as my own.My friends are always impressed with my culinary skills. They don't know that I just took what was given to me as a child.I highly recommend the Shrimp Manicotti recipe.I have cooked this for people who don't consider themselves seafood lovers and have won them over.In the past I would not share my recipes with friends.I thought I was only as good as the recipe. Now with this book, I can no longer keep them a secret.I know you won't be disappointed.I also encourage to you to keep an eye out for future editions of this book.Shrimp is only the beginning.

Happy Eating!

Helene Siegel casts her culinary net once again and hauls in a huge catch with the TOTALLY SEAFOOD series. Seafood restaurants have spawned all over the country, and why not? With some twelve-thousand miles of coastline to choose from—the Eastern Seaboard, the Gulf Coast, and the Pacific Coast—Americans have an embarrassment of riches from which to choose. We begin with the princely prawn in TOTALLY SHRIMP. No matter how you serve them—skewered, steamed, saut?©ed, stir-fried, souped or sandwiched, they're always a hit. Without this distinctly diminutive critter, there's no kick in your shrimp cocktail and no jump in your jambalaya. So be liberal with these little fellas. ... Read more
