I used this book when I was living at home, and then again, when I was cooking on my own.

I needed a new copy, as I had long used my older copy until it was dog-eared and well-loved.

The recipes we used most often at home were the flourless nut tortes, the Chrustiki, pierogis, Panchki, Borscht, Miseria and many others.

In reading my copy when it arrived, I noted the value of reading recipes in their old world form, but did note that the publishing company also has other Polish and European titles I might like, as they would be more up-to-date and more nouveau in their Gourmet cuisine approach.

Nevertheless, this is an excellent primer for any one interested in Old World Polish Cooking.

You could start with Chicken Baked with Prunes, prepared in the 14thcentury for the Bishop of Zeitz. The ingredients include sliced onion,shredded white cabbage, large prunes with their pits, chopped parsley,juniper berries, a large roasting hen cut in half, bay leaf, bacon, ginger,cinnamon, a red Hungarian wine, and a little dill seed. This bakes,covered, in an earthenware pan, and is served on boiled milletrefried in oil or butter and accompanied by green mustard sauce. This book is filled with a wealth of educational material.This book is comprised of mostly history regarding the culture, the food, and the people.The recipes are well written with measurements in english and metric, temperatures are also given in standard and celcius degrees.Most recipes are from the peasant folk with a few meat dishes sprinkled in.Some recipes are common to today's standards while a few of the others would not typically be seen served in today's kitchen.There are approximately 30 recipes or so in this book.Each recipe has its history in terms of how it was served, to whom it was served, and when it was served.The book is a worthwhile read.

This is really more of a history book, to my reading.It has wonderfullittle known facts that I would never have learned otherwise.There is alot of research that went into this book, and she obviously worked long andhard to get this book and the history into order.This is a wonderful bookfor anyone who is interested in Poland or Slavic areas, and the recipies,to me, almost seemed as an afterthought, though I do not doubt they arecorrect and proper for Poland.Enjoy!!! ... Aniela Rubinstein---reading her cookbook makes me wish I'd known her well enough to have tea with her every now and then. She must have been a joy. I've used her recipes for nearly 20 years now---delicious, imaginative, and each one with a history---a story of her family, of travels, of the past. Arthur Rubinstein was a magnificent musician. His artistry in music almost equals his wife's artistry in living---loving her children and her friends.

Her pie crust recipe, the one with the egg yolks, works perfectly. I thank her every time I make it. Every recipe is delicious, and comes out exactly as it should. There is a coconut/raspberry jelled dessert that is inspired. The chicken cutlets are tasty. And potatoes with raw onion, black pepper, and sour cream. Mmmmm... thanks, Nela ... Read more

I must disagree with the reviewer from Amsterdam. I think this is quite a good cookbook. Though, if you're expecting Nouvelle Cuisine or modern fusion cooking, you will be disappointed. Slovak cooking is, at its heart, peasant food: hearty, filling, and unsophisticated...but good! Pirohy, dumplings, stuffed cabbages, pork dishes, poppy seed and nut rolls, and mushroom soup flavored with sauerkraut juice take me back to my Slovak grandfather's kitchen (my grandfather used dried wild mushrooms in his soup). My one criticism of the book is that, aside from the brief introduction, it contains no information on thecultural context of the recipes. Some personal anecdotes from the authors, and a bit more on the food traditions of Slovakia would be welcome.

This is not the best cooking book I have ever seen, there are not pictures at all, and some meal might be particular to the authors area in slovakia , the introduction starts with saying from slovak people, which is unknown from my girlfriend who is slovak... When I read this book, I felt like it was written very quickly, it does not seems to be written from someone who got the receipies from his grandmother.However, it gives a good overview of what they eat, I recommend the cabage soup, mnam !!!

A few years ago I found myself in a situation not too different from your own. I had married into a Jewish family and desperately wanted to be able to impress my new family. The problem was that I didn’t have a clue how to get started in the kitchen. Although I had given it a try on numerous occasions, it was always with dismal results.

I didn’t understand what I was doing wrong.I had spent a ton of money on the best ingredients that money could buy but it didn’t seem to make a difference.I was determined to prove to myself that I had what it took to make these delicious dishes.

The only problem was that I had no clue where to start.

None of the books I had read on cooking had been able to solve my problem. Some might have passed on a helpful hint or two, but did not solve my problems. One night I commented to a friend that what I really needed was a comprehensive guide on everything to do with how to create Jewish dishes!

That’s when it hit me!



If I couldn’t find a comprehensive guide on Jewish Cookery, then why not create my own? I was tired of flipping back and forth through tons of books for the few bits of information that could help me; but I reasoned that if I put all those little tidbits of info together then I might actually be able to begin understanding the secrets to creating successful Jewish Cookery.



The next morning I furiously began to read through all of the cooking books that I had purchased over the past three years and take down the pertinent notes. I didn’t stop there either. I swallowed my pride and enlisted the help of my neighbors and friends to discover what they were doing that resulted in such successful items.

It took awhile to sort through all of the information I had gathered and compile the notes I received from the experts I consulted, but when I was finished I sat back and was completely stunned.

I totally wasted over $4 on this completely useless cookbook.First, the electronic formatting is a mess.No table of contents, no index, no way of looking for specific recipes except to keep scrolling.There there is the problem of the recipes themselves.This book seems to have been written by someone whose first language in not English.Lots of grammatical errors that get in the way of understanding what the recipe wants you to do.Second, the recipes have no ingredient lists or specific quantities for ingredients, rendering them pretty useless.And there are no cooking times listed, either.Finally, I don't know whose Jewish Grandmother the author is trying to cook like, but I do not recognize many of the recipes included as being Jewish at all.And since the introduction is written in such poor English, it is very difficult to figure out what the philosophy of this cookbook is or the approach the author is taking.All in all, it reads like someone's notes were simply compiled and transmitted electronically with no editing or recipe testing.I bought this for $4.77 because I figured that for this low price I'd take a chance.But the book is not even worth that small amount of money.It is a waste. ... "Culinary Arts Institute Polish Cookbook" (Hardcover, 96 pp., 220-225 recipes) is a good Polish Cookbook for traditional Polish foods.Also, There are short chapters on Easter and on Christman.The recipes have relatively clear directions, but there are very few pictures of finished dishes.The hardbound book is of good quality and is appropriate for use as a gift.

Be sure to read the recipe carefully before using it!Polish cooking has some difficult dishes and some that require days to prepare properly.(Some dishes require fermentation of a basic ingredient to achieve the best, slightly sour, taste.Poland gets cold weather in the winter and this strongly affects the character of the cuisine.

I wish I'd had a copy of Joan and David Peterson's "Eat Smart in Poland" on my trips to Poland in the early 1990s--and maybe on my last trip to Chicago, too (where there's a large Polish community and some good Polish restaurants).Reading this excellent travel guide for food lovers brought back fond memories of the Polish dishes I've eaten from Warsaw to Krakow to the American Midwest.And it made me want to eat my way around Poland again--following the authors' recommendations for "national favorites" and "regional classics" served throughout the country.

This is really an unusual book, the authors share their great knowledge not only about Polish food and dishes, especially the dishes which are unusual outside of Poland. They describe how Polish cuisine developed through history, they explain how to read a menu in the restaurant, how to shop for food.. and all of this information is in a very concise form - also with the dictionary of Polish "food" language, the dictionary of Polish dishes, recipes, beautiful photographs.
