"The Art of Polish Cooking" is an excellent Polish cookbook. There are, about, 500 very good recipes for almost any occasion. Also on the plus side, there is a good section on Polish customs and favorite menuses for various occasions.Also, there are many good recipes for cake and other desserts.

However, there are only a few recipes for bread.There are no photos and not enough drawings of finished dishes.

On the whole, I think this Polish cookbook is very good to excellent and offers many recipes for a reasonable price.However, there is a need to supplement this book with another that covers the areas missing in this one.

This cookbook is a classic and presents straight forward recipes that are as close to the foods made by my Polish in-laws as you can get. I actually bought a copy of this book thirty years ago. My recent purchase was for my son and was not a disappointment.

Made my first-ever stuffed cabbage leaves from this book (but added lamb, as the beef-only sounded so blan.)Got a thumbs up from my Polish relatives -- so much so, they asked me to make more at Easter.Who knew?

I bought this book because I was tired of going to my mom when I felt like authenic Eastern European food. This book is wonderful. The pictures are large and really show how great the food looks. The only drawback are the number of pages. Every recipe has a little background on the dish and to which country it originates from (Poland, Russia or the Ukraine). Polish Cookery is an American adaptation of Uniwersalna Ksiazka Kucharska (The Universal Cookbook), long the most famous standard cookbook in Poland. All weights and measures have been converted to American usage, and suitable substitutions are provided for hard-to-get ingredients. The recipes range from the familiar to the exotic and include soups like Polish Mushroom and Barley Soup, Fresh Cabbage Soup, many variations of Barszcz, the famous Polish beet soup, and Sorrel Soup with Sour Cream.

Hi: well when i got the book and looked at the recipes there were none that my mother ever cooked,it must be a book for the upper class people,and im very disappointed in the book.Also i cant find a recipe on cabbage pie,which is a favorite of Polish people.

Having grown up eating potatoes, kielbasa and sourkraut there are tons of recipes in this book that tailor to everyone's taste.There is a bigos recipe for each type of meat and they're all pretty accurate. It's tough to write a book on things your Mom or Grandmom makes without measuring so I think the authors have done a good job.

I learned to make Pierogies (and the very few words in this review title) at my Mother's and Grandmother's knees. The first time I made pierogies by myself for a family gathering, my Mom said: "Now I can die in peace; one of my children learned the recipe."; but I am truly a novice at Polish cooking. I loved the opening information about cooking in general and tips for a newby like me. That alone was worth the price of the book.

I wanted a book to explore cooking that fed my ancestors and this book offers so much; I will enter retirement with pleasure just so I can try cooking these recipes!

Well worth the cost for anyone who wants to explore the savory side of our heritage!

"Polish Cookery" is a good cookbook for Polish food.

It does have some drawbacks.There are no photos.The number of cakes is limited. There do not seem to be any breads.There do not seem to be any sections devoted to holiday food for Christmas or Easter.Also, I am not totally satisfied with the clarity of some of the directions or with the lack of coverage of the multiple variations possible with some dishes.

However, there is a good and diverse collection of recipes.

I would supplement this cookbook with one or two other Polish cookbooks that would cover the areas that are lacking in this one.

This book is OK but NOT Great.Coming from a Polish background, there were several recipes that I was looking for and was disappointed that they weren't in this book.It's really hard to purchase cookbooks online, as you can't check out the directory beforehand, to be sure that it's what you're looking for.

I purchased this publication from a heritage/historical society. There are some great recipes in it that were lost when Busha died. Now my aunts and cousins can again create some of our families favorites.

"The Best of Polish Cooking, Expanded Edition" offers many decent Polish recipes, with a chapter on light Polish food.The organization of the book is, both, good and a challenge.I think that American cooks who would like a change from the same old fare will like this book.However, some Polish-Americans, decended from peasants, miners, and laborers, may not like this book as much as most Americans.Normally, bread, other baked goods, and desserts would be presented in a separate chapter and there would be an emphasis on very traditional foods for Christmas and for Easter.Also, I was puzzled by odd, high society, Dinner menues for Christmas Eve and for Easter.I, also, was puzzled by a full chapter on Vodka while beer, which is even more essential at a Polish table, is almost totally neglected.

While the recipes presented are good food, I think Polish-Americans will want to buy one or more cookbooks that have a clearer presentation of Polish traditions and customs for holidays as well as clear recipes and instructions for the usual, highly traditional, Polish dishes (For example, one form of pierogi is given, with an unusual recipe. But, a half-dozen other types of pierogi are not even mentioned.)Further, I found the index to be confusing, using non-traditional names for some dishes.Finally, some of the recipes have woefully inadequate directions for the cook who is inexperienced with some of these dishes.

One distinctive feature of this cookbook is the grouping of foods relative to the four seasons of the year. Also, the name of every dish is written out in Polish along with a full English-language translation.

This book traces the history of some of the Polish dishes. One also learns that the culinary customs of the Polish nobility had been influenced by those of the nobility of France, Czechoslovakia, Saxony, Hungary, and Italy.

There is discussion of an elaborate, multi-course Easter dinner for ten people. And, besides the more common Polish dishes, West provides details on the preparation of the roast suckling pig.

If you ever wanted to know where Babcia learned to cook - this is it!Every conceivable Polish recipe can be found on these pages, provided with loving detail and insider tips.Mr Strybel makes it his business to ensure you get the "feel" of Polish cooking, not just the bare bones..He provides a very useful intro describing what makes Polish cooking unique, what kept it relatively unknown and unappreciated, what gives it its national flavour and even why Poles use the ingredients they do - fascinating insights, not just for Poles.
There are just enough photos and step-by-step illustrations to make things easy and inspiring, and whole sections are devoted to making your own produce, such as dairy products and meat products not readily available outside Europe.This is an immense help to Westerners who don't even seem to have access to natural, raw milk these days - Mr Strybel has some interesting things to say about health benefits and modern nutrition here! Though probably not his intent, Mr Strybel makes some of the most compelling arguments for a return to "slow" food I have ever read.
Although ingredients aren't listed at the beginning of recipes (to save space) it really isn't that much of a big deal - after all, when you're cooking you probably have to read through the recipe a few times anyway to get the feel for the job, thus familiarising yourself with what's required.Instead, Mr Strybel has provided an excellent index, in both Polish and English, making recipes easy to find, even by ingredient, which I think is far more useful than listed ingredients.
What I loved most about this book, however, is Mr Strybel's courage to present Polish cooking unashamedly as it is - a relatively unknown (he explains why this is so) culinary tradition, which once sampled cannot be forgotten - the kind of home-cooking that will always be chosen and enjoyed far more than any haute cuisine can be because it feeds the soul as well as the body.It's simple and stodgy cuisine, right? Wrong! This prejudice Mr Strybel blows completely out of the water by reminding us that peasant fare mixed with royal culinary tradition gives you dishes such as slow-roasted duck with wild mushrooms and juniper berries - it ain't all cabbage, folks..not that there's anything wrong with cabbage if you know how to cook it.
For the health conscious, on the face of it, Polish cooking is high fat, high everything cooking, but as Mr Strybel points out - well, you'll just have to read what he has to say about all that!
It's been said before but I'll say it again - this is the definitive Babcia's bible!Whether you're Polish or not, you'll be amazed at the breadth and depth of this book - I know I was and I've been cooking Polish food all my life.Thank you Mr Strybel :)

A wonderful Cookbook. I have never seen so many variations of dishes. My goodness I have to try that Blueberry Soup! This book will get used often. My husbands all Polish, but his family never cooked with sure variation like in here. I will surely recommend this book for his relatives or anyone. My wife's a Pole, and os I bought this for her despite the fact that I've never had a Polish dish I've liked.But if you thought Polish food was nothing but sausages, cabbage, and mixing nasty fish into your otherwise fine patatoes (as I did) then prepare to expand your definition of what Polish food is all about! There's some really good food in here.

A few people have cited problems with the directions, which are presented in paragraph form without the typical list of ingredients needed followed by a numerically ordered process.You will need to adjust, but the recipes are short and simple.Few recipes are longer than this review that you're reading right now.Just read the recipe first, make sure you have all the items you need.It's not so hard!

I also like how the titles of each dish are in English AND Polish, though I'll never, ever be able to say those strange Eastern European words.

The book is well organized too. The large section concerning the many Polish ways of preparing rabbit however, will probably never be exhausted by most Americans, as few grocers supply the meat.

What separates this book from others is that it covers all types of meat products and sausages.
You have blood sausages, head cheeses and meat jellies, liver sausages, Kosher sausages, hams, jerky, and meat jellies, liver sausages, bacon, salami and other products. Not just the recipes
but the manufacturing process as well. All backed up with the governnment standarts and plenty of fotos and drawings.
Strong emphasis is placed on safety, I have especially linked the explanation of behavior of bacteria. The first part of the book deals with meat science but it is written insuch a simple and logical manner that it was a breeze.
The book is huge and at this price is a steal.

Very detailed, informative book on making sausage.Have not ever made any before, and still havent used my new 'sausage' making machine (COSTCO) but this is definately the book I will be using.

"Old Polish Traditions" is a good place to start learning about Polish food and customs.

The book has good, short, sections devoted to Polish customs and traditions. And, it has good recipes for a number of Polish foods, especially finer food.This is not a long book and there are many, many, Polish food recipes.However, it is a good place to start learning.

Read through the book and its recipes.Start with something simple, such as a mushroom soup.However, many of these recipes can be difficult and/or time-consuming.For instance, Bigos is a hunters stew, usually started with saurkraut and two or more types of meat and is rarely ready to eat in less than three days.Some of the recipes can be daunting, such as stuffed roast pig. Some of the dishes take time, labor, and much practice to achieve really good results.Paczki (doughnuts) and Pierogi are among this class.Some of the Polish dishes are not simple.For instance, I can make a white borsht in less than two hours, but a proper and better tasting white borsht takes four hours of work, spread over three or four days.

So, for a while, stick to the easiest recipes.If you like some of those, perhaps you should buy a cookbook with more Polish recipes to continue building your skills.Then, come back and start working on some of the more difficult recipes.

Simple recipes include: Dry-Roasted Buckwheat, Barley soup (Krupnik), Roast Beef Roll with Mushrooms, red-beet salad with horseradish, and date mazurek.

This is a great cookbook for people who hate cooking but love history or for those that love cooking and know it by heart.
The history secsions of the book are wounderfull and insightfull on how is was back then, and from all that I have read about it, there are a few flaws here and there (not the best historical research or translations of it).

For the cooking, very good for those that acutally do eat lots of fat. If you are trying to cut down on fats in your diet, this book is not for you.At times reciepes them selves were confusing, and not much variation of things that you can add with a dish (one example pierogi). A great deal of dishes from the Easter and Christmass sections that are missing, and that are also traditions.
Also not a book for those who do not eat pork or drink alcohol, althou there are substitues for both, if you dont know of them then the book is useless.
Knowing some of the cooking from experience, this is pretty good overview of BASICS of Polish traditions and cooking.

This cookbook is a true tribute to Polish cooking, presenting the culinary history of Poland, Polish cooking-related legends and a variety of tasty recipes. There are literally dozens of recipes celebrating the diversity of cabbage, kasha and mushrooms in Polish cooking. The cookbook also has recipes organized around the holidays, with chapters entitled "Christmas" and "Easter". Each is filled with delectable dishes ranging from appetizers to main courses to desserts.

Hubby and I had a party making pierogi..........every variety presented in this cookbook: potato, sauerkraut, cheese, meat, kasha, and even fruit! Also delicious was the Cabbage with Mushrooms and Nut Croquettes. Great for dessert is the Old Polish Royal Mazurek. In short, this cookbook is really helping me get in touch with my Polish roots!

I do have a few criticisms though. For one, I have found errors in some recipes. Secondly, ingredients required for a given dish are not clearly laid out before each recipe, making it inconvenient because one must read through the whole recipe when making a shopping list. Also, sometimes instructions are vague. I've made one recipe that instructed cooks to "bake in a hot oven until done". Thus, beginners might have a tough time with this cookbook.

Overall, I recommend this cookbook to seasoned cooks who are eager to learn about Polish cooking. Newcomers to the kitchen should probably use a different cookbook.

Not many people realize how *fine* is Polish cooking - and how sophisticated are traditional Polish dishes. This book dispels many myths - for example, it is NOT the kielbasa, cabbage rolls and pierogi what is thebest and most celebrated food in Poland.

This is more than a cookbook -it is a wonderful history book filled with an amazing mix of culinary factswritten in very entertaining style. Authors Maria Lemnis and Henry Vitryare very well known Polish food columnists (as celebrated as Julia Child isin the US). They are brilliant writers who understand Polish food betterthan any other cook book writer.

It is a pure delight. Definitely thebest book on Polish food in English language. Written for people who canappreciate a good story, fine writing and good food. It has not as manyrecipes as other cookbooks mentioned here, perhaps 50 recipes or so. But itis the quality of recipes that counts.

My parents (who emigrated from Poland) consider this the most authentic Polish cookbook they have come across. Many of the recipes in here are very similar to ones that my family uses. If you're from the north of Poland, near the Baltic coast, you'll probably feel the same. Many other Polish cookbooks use versions of recipes that are more authentic to other parts of Poland, which doesn't always taste right to us. But when my mother visits and doesn't have her recipe for something, she will often use this book instead. The recipes have also been "Americanized" somewhat to make finding ingredients easier (compared to the "truly" authentic recipes in other books), or leverage equipment found in most American kitchens. However, there are still some esoteric directions or ingredients which is why I gave it 4 stars instead of 5. BTW, another reviewer had trouble finding "instant flour". This is easily dissolving flour such as Wondra.

Don't be fooled into buying this book, if you loved the older version with all the great pictures.There are no pictures in this one, unlike the older 1991 version. The book is also smaller making it difficult to keep it open when looking at a recipe.

The recipies are mostly the same, though. Too bad the author was convinced to go with a more unfriendly cookbook style than the wonderful earlier versions of this book.

I bought this book ten years ago when I needed to make a dessert for a Russian club event (figuring nobody would notice if I substituted one Slavic culture for another).I have never been disappointed.Every recipe I've tried from it has been relatively easy to make and incredibly, incredibly delicious.Be warned, there's nothing quick in this book - if you're a slow cook like me, plan on a couple of hours for a main course - but the results are very worth it.We particularly enjoy the Vienna pork rolls (not sure how a recipe named after an Austrian city is Polish, but who am I to question?) and "carrots in sauce."

If you think old world cooking from Eastern Europe's Jewish community has vanished, think again, and order Cooking the Polish-Jewish Way. This little volume, which appears translated from Polish to English, is a gem. Not only are the recipes great to read, but they are also very good and accurate, giving that old world, lost flavour to the food you remember from your youth. The recipes accurately strike the balance between Polish regional and Jewish cuisine, and NOT American-style. If you're pining for the old recipes that got lost years ago, you will find most of them here. Also - I don't know what actors they used to pose for the pictures, but they are precious.

An invaluable recipe/cookbook for the descendants of Polish Jews and Christians. Prepared (no pun intended) in the early 1960s, during the era of good feeling, the text is touchingly adorned with cast photographs (are those beards for real!?). The recipes are masterfuilly simple (love that home-made raison wine), in contrast to those Byzantine convolutions
found in the recipe-books of the French this or that, perhaps a reflection of what? By the way, to paraphrase a late cookbook author/actor of Italian descent, this is not what my ancestors ate in the old country: This is what the aristocracy and gentry ate; and, if great grandmother were lucky one evening, perhaps she would have been allowed a few leftovers. "Polish Cooking" by Rose Cantrell, copywrite 1978, 80 pp., and 130 recipes, is a very good, illustrated, basic Polish cookbook.It does ignore the holiday cooking, and skips some of the best known Polish dishes.But, any cook can produce many excellent Polish dinners and some parties from the recipes given.I think this would be a good cookbook to give to an American cook who wants to cook some different dishes.I found the color photos of finished dishes to be very helpful for presentation hints.

I took a chance of purchasing this book through the mail,hungry for information about anything to do with being Polish.It was a very nice surprise.It's written for the American of Polish descent and is filled with a lot of interesting data. Growing up in Virginia, my family were a long way away from any Polish American districts, and this book highlights the sense of ethnic community that I wanted to experience.

POLISH TOUCHES is a quickway to get the feeling of Polish culture.Starting with a brief history of Poland, the book covers early immigration, Our Lady of Czestochowa, Polish folk arts, traditions, music, Polish heroes, achievements of American Poles, cooking, recipes and other general information. In fact, I was amazed to learn that Chicago has "more than 100,000 Polish immigrants," who arrived in the 1980's. We're told that "Chicago also has approximately 40 blocks of Polish-American businesses."

Being a history buff, I was pleased to find two of my favorite American Revolutionary War heroes mentioned. Brigadier General Count Kazimierz (Casimir) Pulaski was a cavalry and guerrilla warfare expert. His corps, the Pulaski Legion included Light Horse Harry Lee, the father of General Robert E. Lee. Pulaski was wounded in the Battle of Savannahand died aboard the Wasp, an American ship. He was thirty-one years old.

The other short, but concise biography is of Brigadier General Tadeusz Kosciuszko, a brillant military engineer and an aide to George Washington.He's known for his engineering feats which include the fortifications at West Point.Washington presented his own sword to Kosciuszko, who was also awarded American citizenship.

This book is a excellent resource of Polish recipes and customs....it is wonderful to find a book with such detail when many of my Busia's recipes call for a "little of this" and "add a handful of that".The book was shipped in a timely manner and in excellent condition for a used book.HOWEVER, I paid $40.00 for this book and when I opened the front cover, on the sleeve the list price was $29.95.I wonder why International Books felt the need to increase the price from $29 to $40 for a USED book?....Hmmmmm....I think I'll avoid buying books from International books from now on....

This great cookbook not only gives you great recipes, but also some history too. I bought this cookbook and tried several of the recipes which are close to those made by my Babcia and Pra Babcia. When my parents visited once, I showed them this cookbook and within ten minutes my Father had ordered one for himself.

Now, everyone's family does things a little differently & we remember those small nuances. This cookbook will get you on the right track regardless, and all you might need to do is tweak here and there based on your family's traditions.

The author starts with details of the Polish country Kitchen and proceeds to traditions and food preparation for the four seasons, including the various holidays.

This book is a wonderful place for Americans of some Polish heritage to get a sampling, a taste, of that heritage.Here are the traditions and foods of the Polish peasants and common laborers, who made up a large portion of the Polish immigrants to America.

If you are from a different Slavic heritage than the Polish, this is still a fine book to have because of the illustrations and explanations of cooking techniques that are common to most of the Slavic cultures.

Definitely, a five star cookbook.

"Polish Holiday Cookery" is an excellent cookbook for Polish Holiday food.Whether you are an American cook searching for some new dishes or a Polish-American cook who wants to connect to your Polish heritage, this book is for you.

I have two (minor) quibbles.1. The Polish-American cook will want to find another book to give more information on Polish traditions and customs for the major holidays. 2. There are no photos of the final dishes.

If you are new to Polish food, try the Clear Beet Soup, Easy, or the Sauerkraut Soup, Fast-Day, or Honey-Spice Hearts, as a start. There are many easy dishes presented.However, some of the dishes are not easy and may take quite some time (days) to prepare properly.If you have never had the dish before, try to find an experienced Polish-American cook for advice on achieving the best results.Also, there are internet sites that are very helpful on some signature dishes.

I recommend this book.

This is an excellent cookbook for Polish,, Ukrainian, and Russian dishes.There are plenty of color photos and clear recipes.This book would make a good present for someone who is interested in Eastern European cooking.
While the book is somewhat short, having only 70 recipes, the recipes are very good and they are of somewhat higher quality than the normal peasant fare that most Slavic-American families use from the turn of the twentieth century.I would also recommend "Cookin Russian in America" as well as a good, standard, Polish cookbook.
