Tried the Tres Leches Cake Recipe twice...to the tee! was more of a pound cake consistancy and far too sweet, my grandma tried it and wouldn't even eat it! The book is missing the recipe for Aroz a la valenciana! which is kind of a staple! my grandma and mom were pleased when looking thru the book but i haven't tried any other recipe's so i'm hoping for the best! Has a lot of recipes ! to my surprise!a few my grandma from Managua never heard of...

Simple cooking yields yummy results. Nicaraguan cooking does not seem to be complicated or sophisticated. No need to be so. Simple combinations of basic vegetables, read the friendly recipe, and plus an easy on time attitude, and then you can enjoy delicious meals, at the end or during the process. San Francisco has so many Nicaraguan restaurants and the flavor of their food is so authentic that I feel back in "mi tierra". I can't help but say that I found many recepies in this book to be off or to be misled in the ingredients being used. This is the quintessential cookbook in that every time I make something from it EVERYBODY and his mother wants the recipe (which I don't dare give out -- if they want it, they can buy the book)!

Rafael is a secret waiting to be exposed -- hopefully on cable television with his own cooking show one day. Check out his other books from Chronicle -- they're not as well written (but don't blame the chef), but they make great companions to this spectacular volume.

I have been reading and using Daisy's first (PBS) cookbook and I have been blown away by it.I watch her PBS series (from 2005) over and over again.She's such a spitfire! And her recipes seem so authentic.I have searched out culantro and been mightily impressed.
This new book.I don't know.I know I won't use it as often as the first.She looks like a Soccer Mom, now, and she uses shortcuts in some of the recipes (Minute rice!)
I say, DAISY!. get back to your roots and teach us more of the authentic latin cuisines you know.I've got your old sofrito bagged in my freezer in 1/2 cup portions. And I loved the themesong to your first series.Takes a good half hour to get it out of my mind after each episode.First cookbook was nominated for prestigious awards, and it deserved them.Get back to that state of mind and I'll give your next book a try, but not without checking it out in person at a brick and mortar store before ordering online.Please return to the basics of Latin cooking and make us follow you, not you follow American ingredients.I love you Daisy! You should definitely be up there with Rick Bayless, considering your wonderful Latino upbringing.

The recipes are easy and if you really want to know how to make Puerto Rican dishes without going to Puerto Rico get this book.

The author criticizes other diets, such as South Beach, as being too difficult and time consuming to follow. Then I read the grocery list for the Hot Latin Diet. The first ingredient is aji amarillo.Ever heard of it? Then I turn to the recipe for lunch on day one.Besides sushi grade tuna steak, and a fennel bulb sliced using a japanese mandolin (I'm not making this up!), you add 4 boiled quail eggs! Need I say more? Unbelievable!

Frankly, I don't know if this diet works or not? But one thing is obvious--the author clearly needs to lose weight. He is a frequent commentator on the Fox News Channel and is visibly overweight (and not just a little) and does not look healthy to me. I say this not to be unkind but to illustrate a point. So many self-proclaimed "experts" claim to have the secrets to a healthier, wealthier or happier life but, in reality, just want to sell their programs. I say "put your money where your mouth is!" I will not buy a book/program about financial freedom and wealth building unless the author has demonstrated financial success. Likewise, I will only buy a book about weight loss and/or health and fitness from someone who is, in fact, healthy and fit. It's all about CREDIBILITY. It reminds me of lyrics from the the 1971 song, "Sunshine" by Jonathan Edwards: "...he can't even run his own life, I'll be damned if he'll run mine..."

I've found the recipes in this book to be very quick, easy and tasty.If anything, they are a bit on the mild side and could use a little morespice.They are very much geared to the North American kitchen and haveingredients that are easy to get. One big drawback is that each recipe isnot labelled with the country of origin. I was given this cookbook as a gift from a dear friend.She told me it was one of her favorites.After using the cookbook, I understand why she likes it so much.I have gotten many great recipes from it.Most are easy to prepare and many include comments from the contributor.Although there are plently of "special" recipes, most use normal ingredients that you're likely to have on hand.This one's a winner!

This book was filled with anecdotes and anthropological points of view of the history and cultures that created these dishes.What I found very useful about the listings was that each recipe was put into its own country category, and sometimes even it's city of origin.It had many recipes that were not mainsteam, restaurant fair, but more the home-cooking of latin american people, which I like.I also liked the fact that they used chiles that are not found in the US, but gave you substitutions of chiles that are available there. ... It's about time someone came out with a book that celebrates the passion, vibrancy, and color of Latin America. I'm sick and tired of being bombarded with everything ITALIAN and FRENCH! So boring and overdone. Entertaining in the Latin style is not about being stuffy and formal. It's about warmth, hospitality, and flavorful food. I loved everything about this book--the photos, recipes, and design ideas. Although I am a Latina, one needn't be Latin to be inspired by this book. Also, something remarkable for an entertaining/cookbook: you will actually use the majority of the recipes instead of just gazing at them in a book.

Do not order this book from A1.Even though they advertise that they have it in stock, you will end up waiting three weeks to find out that you'll never get it because it was "out of stock."

This was one of my very first cookbooks. I received it as a gift and at first was intimated due to the author's / chef's reputation and the book's photographs, which depict dishes as they were presented at Patria, Mr. Rodriguez's former NYC restaurant. Nonetheless, while I'm not a "star chef", I've had great success with several of these recipes and even ventured to make a few variations.

Is this cool way of cookin?!I'm totally impressed by the style and excitement of this style of cuisine, full of marinades (adobo in Spanish, both dry rub and liquid), and that hot/cool tension of Latino food.

With tropical fruits and Latino veggies and tubers (malanga, yuca, etc) this introduces most of us to an exciting whole new venue of possibilities.

It's all here, drink suggestions and Breads (you've got to try the Yellow Arepas, they're worth the book itself).Amazing array of salsas and mojos, such as Ruby Grapefruit, Shallot and Cilantro Mojo (unblievable flavors).

The offerings here are spectacular, Grilled Flank Steak over Mushroom Ceviche.Who would have thought of that, ceviche applied to small button mushrooms which this guy found in Peruvia through his dad's barber.

Knockout dishes like Original Plantain Coated Mahimahi served with Tamarind Tartar Sauce.Avocado and Pistachio Crusted Gulf Snapper with Black Bean Sauce. Sugarcane Tuna with Malanga Puree and Dried Shrimp Salsa. Mango and Mustard-Glazed Salmon with Calamari Rice.

This review could continue to speak of creative dish after dish.Desserts are equally attractive, with fruit and flans and rice and a neat dish to dazzle your guests from Cuba, Brazo Park Avenue with Banana Mousse.

All nicely packaged by one of the best, Ten Speed Press, with class and style, color photos and rich, vibrant text.

This is a Beautiful Book along with the benefit of being a cook book.Ingrid, gives some narration to the joy and history of the recipes.My only wish is what may be obvious to her, "Latin Twist" I don't always know what she is talking about.Thus giving me a little encouragement to look up or find a little culture to exactly where I might find a certain ingredient or what it is, LOL. The recipes are easy to make, due to her ability to share exactly how to do it.Her fun personality comes out and so far the recipes I've made are great.Along with her show, this book makes me happy.It's colorful, easy to read and nice you can read the font size at a glance, great for setting down when cooking.I would recommend it!The best part for me, I got a used one on Amazon that looked brand new for $8.00, can never go wrong with that and the seller sent it the next day.Thanks Amazon!If there is a downside, it's that Ingrid can't come in person and be your friend and enjoy the meal.I wish she would write a book that's even more basic for us Norwegian beginners of Latin/Mexican food.Ingrid it's YUMMY!

I first learned about Ingrid Hoffmann through her show on the Food Network, Simply Delicioso. I don't know a thing about Latin-style cooking, but her show piqued my interest. After trying a few recipes from her show, I bought this book, and it was well worth the money. There is a nice variety of recipes, with the majority of them being easy or moderately easy to make. Less traditional Latin cuisine than a cultural fusion, there are a lot of very good recipes here. Hoffmann does a very good job of explaining many of the ingredients she uses, such as adobo seasoning, and that's quite helpful. I like her vibrant take on food and cooking, and I think that's what makes her show (and this book) such a breath of fresh air. It's not the same old same old.

Nothing against Daisy Martinez personally.I ordered this through an affiliate for a anniversary gift for my wife (who is Puerto Rican).We saw one of Daisy's shows on TV and my wife was very interested.The order was put through and processed, so I figure great, our anniversary is next week, so I'll have it here in time.Today I get an email from Amazon stating the order was cancelled with no reason why. Very disappointed.Not very good customer service. Now I'll have to go find this locally if possible.

Apparently there must not be much to Latin American Cuisine in terms of exotic and maninstream foods.This book was a big disappointment.Most of the recipes were of other ethnic cuisines given a "Daisy" flair.After watching her TV series several times I was intrigued.I was looking to do some serious ethnic cooking especially exoctic Latin American, Cuban, Caribbean, and Puerto Rican fare. I wanted a book that contained many recipes with Mangos, Papayas, Jicima, Plantains, Bananas, Star Anise, various roots and tubers, with different spins on meats, poultry, and seafood. When the book arrived I was disappointed to find that it was filled with classic French, European, and American fare.For example I wasn't looking for recipes like Roasted Chicken with Garlic Rub, Shellfish Saute with Parsley Garlic Sauce, Beefsteak with Onions, Grandma's Pork Chops, Creole Style Potatoes, Fried Okra, Stuffed Artichokes, Chicken with Potatoes and Wine, Fresh Cod with Clam Broth, Mexican Flan, etc. All of these recipes were found in the book and nothing very different from the same recipes that may be found in any other cookbook on Southern, Cajun and Creole, or American fare. In fairness to Daisy, the book did have a few truly Latin American recipes like Sofrito, Achiote Oil, Yucca Fritters, and a good recipe for Cuban Sandwiches.Unfortunately the only thing about this cookbook that will 'rock your world" is the outrageous asking price.Try and find a used copy if you really must have this cookbook. Sorry Daisy.

I have always loved all aspects of latin food, but never knew how to authentically prepare my favorite dishes or which ingredients to buy or keep on hand. The recipes I did come across were watered down, flavorless versions of the classics, created by non-latinos. Then, several years ago, I saw Daisy's show on PBS ("Daisy Cooks!"). At the time, there were no cooking shows featuring Latino chefs and their food. I was so impressed with her show, that I bought her cookbook. What a revelation! Daisy's recipes are absolutely divine! They're easy to follow, hassle-free and the outcome is amazing! The very first recipes I made form this book were Tostones, Chiccarones (with garlic dipping sauce) and Arroz con Pollo. I followed the recipes to the tee. Couldn't believe that I made food that delicious! Tasted like a little old Puerto Rican grandmother came to my house and cooked. This is a children's cookbook, so be forewarned (something I did not realize when I purchased the item).While the instructions and introduction to Brazil are "nice enough", the number of recipes are sorely lacking.This book does not give a reasonable cultural or recipe sampling for the asking price.

I lived in Brazil for a number of years and was looking for a recipe book that was in English to share with friends and family that do not speak Portuguese, as well as recipes that I remember from my time there that I do not have in my collection.This book did not meet that expectation in the least.

I was definitely expecting something much more intensive and voluminous.Even as a children's book it is light on the recipes.

Not worth the money whatsoever.You would be better off printing recipes out online.What a disappointment.

Book was delivered promptly and have really enjoyed it.It is suppose to be a "light" cook book but all I want to do is cook, eat, cook, eat.Will need to limit myself - all in moderation.

I bought this thinking it would be great, but I was sorely mistaken.150 pages are taken up with diet book mubo-jumbo.I wanted a cookbook, not a speech on healthy living.I already live healthy, that's why I wanted a good COOKbook - not diet regime.Don't waste your money on this if you are only looking for recipes like I was.
