Product Description
This delightful and personal cookbook introduces the Western reader to a varied, popular and always lively national cuisine. Korean food, with its emphasis on fresh, crunchy salads; lightly steamed and dressed vegetables; rice, beans and noodles; and marinaded charcoal-grilled meats, fish and poultry, is a diet perfectly suited to the tastes and the the health-conscious concerns of diners and adventurous cooks today.

About one hundred and fifty easy-to-follow recipes teach the home cook the secrets of a hitherto little known cuisine. There are recipes for classics such as pajon (scallion pancake), bulgogi (soy-and-sesame marinaded beef), chapchae (a delicious noodle and vegetable medley), pimbimpap (a one-dish mixture of rice and any assortment of cultivated and wild vegetables and roots), and of course kim chi in all its fiery manifestations.

This is not a book, however, that tries slavishly to recreate Korean foods as enjoyed yesterday or today in Korea. Third-generation Korean Marc Millon, author of numerous book on food and wine in France, Italy, Spain, Britain and elsewhere, understands the difficulties of recreating local and national foods outside of context or country. Not only are ways of eating very different, there can also be difficulties in getting the full range of authentic ingredients and foodstuffs. This book, therefore, also includes second- and third-generation Korean recipes, refined and perfected by the author, who learned them from both his Korean grandmother, Bok Dok Sur, and from his mother Korina Kim.Above all, the overriding criteria in recipe selection is that the end results are delicious and give a true flavour of of an exciting country and cuisine.

Flavours of Korea is written for both the practical cook and the armchair cook. Illustrated with Kim Millon's superb photographs and line drawings, it tells not only of the tastes but also of the sights, sounds and traditions of town and country.

Much more than just a cookbook, it is based on thorough knowledge, personal experiences and journal notes from their own travels in Korea, and on stories and recipes recounted by Marc's octogenarian Korean grandmother. Above all, it is a culinary journey into a vividly different but always delicious culture and country. ... Read more

5-0 out of 5 stars great book for beginners to korean cooking
I was given this book by one of my Korean friends after I expressed an interest in learning how to cook Korean food. The recipies are easy tofollow for those not familiar with the ingredients and processes of cookingKorean.I also enjoyed the stories that the author included about hisgrandmother and his travels to Korea. I have recommended this book tofriends who want to learn about Korean food.

2-0 out of 5 stars Not Authentic
This book is interesting in that Marc writes about his Korean grandmother who immigrated to Hawaii and created adaptations of Korean cooking. For instance there are recipes for Korean pancakes that closely resemble theAmerican kind that you with Aunt Jemima Syrup on them. Some of the dishesare close but they are more or less adaptations or interpretations ofKorean cooking. They are not dishes the way Korean nationals would cookthem.Being Korean and after eating Korean food for 35 years; I found someof the dishes unrecognizable.

The stories are interesting though and thetext is well written.

3-0 out of 5 stars Interesting cookbookbut not authentic
Marc Millon writes wonderful stories about Korean and his grandmother's kitchen, but several of the recipes were not very authentic-but more or less adaptations or interpretations of authentic Korean cuisine.

5-0 out of 5 stars Delicious recipes and wonderful stories
I really enjoyed reading this book as much as I loved trying the recipes.Every one I tried was delicious, especially the pibimbap, the kuksu and, of course, the pulgogi.I would recommend this book to anyone interested in Korean cooking.

5-0 out of 5 stars This cookbook is as easy to read as it is to cook from.
We have a Korean friend who visited us recently. Inspired by her cooking, I checked the local library. This was one of the books I found. This was by far the best of the library's selections. Korean cooking is much more palatable to the Occidental palate than, say, Japanese cooking. For instance, Koreans eat beef. Our friend is a master cook and so I was looking for a cookbook whose recipes were as close as possible to the way I observed our friend cooking; and this book was it. Not only are the recipes authentic and simple, made the way Yong Sun cooked for us while she was here, the commentary shares the culture in a way that makes me eager to visit Korea some day. And I finally found a kimchi recipe that I like (and can eat without losing all feeling in my tongue...) ... Read more

5-0 out of 5 stars Best one so far =D and it's getting alot of wear
Tastey authintic food with good short cultral descriptions. Easy recipies lots of spicey stuff and some really inexpensive ones. If you r having probs finding stuff save up and head to a big city. some example stores to look up are Ranch 99, Pal Doo World, Bo Han market. they are in Washington state but I think they might be in a few others. Most cultures love to share their info so if you can find some asian/islander/oriental people ask them. Most go to the same stores and if you can't find them then go to authintic resturants and ask them.

4-0 out of 5 stars Good not spectacular recipes, variety, easy to read and make recipes
I have quite a few Asian and other cookbooks. I have been to several Korean restaurants, tried some and found recipes in these books I have and on the internet. My two kids gave me this book as a present (it is the older one from 1993). The author writes for many magazines but it seems like he is more a traveler then a chef. But still he must like the food enough to be able to write about it and post the 140 recipes in the book. The book does not have photos but that does not bother me. I can cook and I don't need the fancy photos. It isthe ingredients and the instructions that are important. The ingredients are easy to find and use. American based measurements are used so you don't have to hunt. The Seng Sun bulgogi BBQ(spiced fish) was very good (9.7/10). I marinated the fish with the paste and put the fish on my gas grill. Fish came out great with a little kick to it and a level above average stuff which is what I look for. It was different. There is a good variety of recipes for kimchi (spiced cabbage), vegetables, soups, rice and noodles and meat and poultry.I've only gotten started but you can bet I will try more of the recipes. It's a good place to start with Korean recipes if you want to go beyond regular Chinese. (PS Don't be scared that the recipes might be too hot. They aren't but you can always scale the ingredients up or down a bit. So don't let Korean, Thai, Vietnamese or other Asian foods scare you away because you think it is too spicy (which is what I always hear). You don't know what you are missing if you don't go beyond Chinese.)

1-0 out of 5 stars McDonald's?
I shy away from cookbooks written by non-native authors in general, but I do give them a chance. And whereas this cookbook is slightly more comprehensive than most Korean cookbooks, there are no pictures and without them one is left to one's own devices when it comes to food presentation.

Another concern: the author admits in his preface that during his trips to Korea, he'd "take breaks" from the cuisine by visiting McDonald's to "sooth his tongue." If the author doesn't enjoy the cuisine he's reviewing/compiling, perhaps the McDonald's Corporation might be willing to subsidize his next project?

I re-sold my copy.

4-0 out of 5 stars Good supliment cookbook.
I bought this book to supliment the Dok Suni cookbook after I had been using it for more then a year. There is a lot of options and variety in this book with background information on where and when he found each dish. There isn't really any pictures (as has been mentioned) but if you already know the basics of Korean cooking this is a great book to add to your library.I would rate it just behind Dok Suni for Korean cookbooks and the two are the only Korean cookbooks I have tried I would recommend to others.

3-0 out of 5 stars Not THE choice for those new to Korean food
My mother was Korean and I ate her cooking and that of her friends all my life. I've eaten at a number of different Korean restaurants. No one cooks dishes exactly the same, so don't be surprised if you've eaten Korean food & when you make the recipes in this book, they don't taste exactly like what you've had before. There's an exhaustive supply of tasty, easy-to-follow recipes here; however, one thing you won't get in this book is illustration--there is not one picture or photo in it.If you're a person who likes to know what a dish is supposed to look like when it's cooked, and you're NOT familiar with Korean food, get this book as your backup, not your primer. Note--There is a metric conversion chart in back for those who don't use US measurements. Here's a tip: There are number of sites online that have fantastic recipes and pictures.Do a Google search for "Korean recipes." The pictures you find on some of the sites will give you an idea of what your dish should look like and will leave your mouth watering. ... Read more

5-0 out of 5 stars The Best Korean cookbook ever!
These recipes are very easy to follow, turn out great, and have great color photographs to help show how the dish should turn out. There is accurate nutritional information listing how many calories, fat, protein... are present in each dish. This is also the only cookbook I've ever seen that explains some Korean holidays and traditions in the back.Extremely cool.

4-0 out of 5 stars looking for an authentic Korean cookbook?

Market Definition

Foodservice is defined as the sale of food and drinks for immediate consumption either on the premises from which they were bought, or in designated eating areas shared with other foodservice operators, or in the case of takeaways transactions, freshly prepared food for immediate consumption. Datamonitor's definition excludes sales through vending machines and is restricted to sales in specific foodservice channels (please see channel definitions below). All industry values are given in Operator Buying Prices that is the amount spent by foodservice operators on the food and drink that they serve and not the amount the consumers spend on food and drinks (Operator Selling Prices - OSPs) in these channels. The difference is the mark up the foodservice operator adds in order to cover their other costs and generate a profit. This therefore values the industry in terms of the amount of money for which food and drinks manufacturers are competing.

The industry is broken down in to four segments: Cafes & Restaurants, Fastfood, Cost and Other. Cafes & Restaurants includes Cafes, Pubs & Bars, Full ServiceRestaurants, Hotels and Retail locations; Fastfood includes Quick Service Restaurants, Takeaways, Street Vendors and Leisure Locations (cinemas, theatres etc.); Other includes Nightclubs and sales on-board boats, planes, trains or coaches; the Cost segment is characterised by the fact that a subsidy is paid (either directly or indirectly) to one of the actors involved in the transaction, or where the final consumer pays for the food at its actual cost (as opposed to a price that adds some margin to its basic cost). The cost sector includes the following channels - workplace locations, education locations, hospitals and welfare & services locations. Industry volumes are classed as the total number of visits by individuals to foodservice locations that involve the consumption of either food, or drink, or both.

As such, if several people visit one location at once and there is only one bill (e.g. a group dining in a restaurant), the number of transactions is counted as being one for each person in the group. Multiple purchases made during the same visit (e.g. a person buys several drinks bought over a period of time in a bar) are counted as one transaction. The purchase of drink with food in the same location in the same visit is also considered as one transaction, not two. All currency conversions have been calculated at 2008 annual average exchange rates.
