For a while i was searching for just simple cook book. Some of them more complicated when it take to use every day. My husband and I over 50 years old, so we like to avoid as much we can all the fat in cooking when we prepare our meals. The book is full of great recipes, our frends when visiting us enjoy the way food tastes. We are recomending to eat this way to everyone who like to take charge of their life.

This is an awesome fat free cookbook.The recipes are great, but the even better things are the tips, i.e. like using apple butter as a substitute -- oh...my....gosh is it ever good in Oatmeal cookies -- wow!Hey, we all know about subbing applesauce, but man oh man, apple butter rocks.There are many more in chapter one.I made a great selection with this book and I am thrilled with it....yippeee!

If you are a junk food junkie like me, and you need to extremely reduce the fat in your diet to lower cholesterol or other reasons like me.This is a must have book.With the help of this book and others like it, I was able to lose 25lbs. in five months (and keep it off), and I lowered my total cholesteral by 56 pts.!By using these recipes, I was able to "pig out" and still achieve my goals.I didn't feel cheated out of not having junk food.I also read labels...lots of labels and didn't eat anything that had more than 4% total fat in it.

Thank goodness I only paid a penny for this book. Ok, well the $3.99 to ship it made this book cost $4. I feel like Amazon should pay me $20 for the time I wasted even trying any recipes. I'm sorry but there is no other way to say it but, this book just sucks. It's a long list of ingredients many times, and the end result (along with your time spend preparing it) is never spectacular. I'd say, that several of the recipes I tried could even be called 'craptacular'! For all that effort to be met with disappointment (and family NOT enthused...read: wasted food!) really ticks me off. I'm a good, experienced cook so it's not like I'm not understanding the rocket science if you know what I mean! You can find any one of a handful of great books if you want fat free cooking. This, sadly, is NOT one of them. I also tried this author's fat free baking book and almost gagged on the three things I made. Just...don't go there. Run away, find another book! This one is awful!

I first tried dry cooked green beans I had a load from my garden. My son is not a big fan. He loved these.
I made moo shui chicken big hit. To stay healthy we need more vegetables less fat and salt.
I need to enjoy my food. This book lends me a helping hand.
I didn't try the recipes that other reviewers said were tasteless. I am not a spinach fan.Its too hot for soup right now.
I think its a good book and I would definetly buy another of hers

I love the concept of this cookbook. Fresh, healthy chinese cooking. You will have to play with the recipes and add a bit of this and that. Also I recommend doubling the sauce recipes ( had to for the spicy eggplant to suit my taste). It was great making a healthy dinner from this book. I made the sweet and sour pork (really yummy), sweet and sour cabbage and spicy eggplant. A balanced meal, full of veggies. I was afraid the boyfriend wouldn't like it, I was wrong. And it looked and tasted great! If your creative, you can make it a lil mre tasteful and keep it healthy. Way healthier than the salt and oil-laden chinese takeout.

Okay...first the great stuff!While dieting, its hard to find many options at a chinese resturant besides steamed veggies and plain tofu without sauce andwith a bit of rice (unless your low carbing..than you can forget the rice, even)This book has none of the typical sweet and sour heavy gloppy sauces and deep fried anything...And the food is better for it.

According to the author it is more *authentic* to the real cuisine and I can see that she is right.The recipes smack of healthful trasitional ethnic cuisine...with a bit less sodium and fat.In the beginning there are some general guidelines for reducing dietary fats as well as a glossary of asian ingredients...some familiar (green onions) some more esoteric (agar-agar)...and some helpful cooking hints.

The book is separated into chapters of soups, springrolls and dumplimgs, rice and noodles, tofu, veggies, meat, seafood, and desserts.

The soups that I have enjoyed from this book are the tofu spinich soup, the meatball spinch soup,and the chicken rice soup.All the soups were very low sodium, probably much lower than people are accustomed to.Adding a bit more might be necessary for some people.

The steamed shrimp dumplings are delicious!Sodium and fat on this is low as well but you are eating this with a dipping sauce of some kind so it is a highly flavored and delicious dish.The bai zai chicken is easy and wonderful and also makes a great wrap type sandwich. (plus you end up with a light stock after you have poached the chicken!)The steamed turkey cakes were a bit odd to me...I guess Im accustomed to a different texture on ground meat than steaming provides and I don't especially like the smell of ground turkey. There is a shrimp cake recipe that reminds me of a bit of shrimp toast...( the delicious deep fried shrimp on white bread thing)...Its great when I want a good subsitute for that fatty appitizer.

there is a resourse list in the back of the book to locate hard to find items.But the pulication date is 1997 so its hard to know how current that is.There are however many sites on the internet for delivery of these kinds of items if the ones in the book do not work out.

My only problem with this book are design issues. It didnt lie all that flat and so after several uses on the same page, and trying to get it lie flat the binding has cracked on my favorite recipe pages.Im afraid soon the pages will be all over.The pages also arent able to be wiped of spills and are a bit thin, so you can see the type of the other pages thru them.You cant read it, its more of a shadow, but its distracting to me.I would prefer a bigger font on recipes that have more, rather than less ingredients..and some of these do.Im not sure I understand the logic for taking up half a page with a recipe and half with a large cartoon of walking vegetables when a larger font would have made it much easier to read.

But....as i have said...overall this book has more plusses than minuses.It suits many diets as well as just generally tasting very very good.The recipes are simple and dont require complex cooking techniques or a whole host of difficult ingredients sometimes needed for ethnic cooking.

I was interested in buying this book.I read the previews of other readers, and I went to public library to check out this book before I invest money on this book.I am reaserching for the food combination from Suzanne Somers diet.For level one, one combination is that the veggies can combine with carbos but without fat (oil). In Chinese cooking, it is very hard to achieve bringing out the flavors from spice without oil.I am a Chinese housewife, and I have some knownedledge of Chinese cooking.Just by reading it, I can see these dishes might not be very flavory (especially Tofu dishes, which need some effort to get taste into this ingredient(tofu) through stewing or some heavy tasty paste).

In most of the receipes, cornstartch is used very often, which is the thing I try to avoid (refined carbos).This book uses many cooking spray (which is oil) in many dishes.It has some fat free dishes, but I consider they are not significant enough to be called such title as Fat-Free Chinese Cooking. A low fat title is more proper for it.This is a very American-Chinese cookbook taste.

Well, I'll keep looking for some other fat-free (or low fat) cookbook to see if there is some idea to replace oil in Chinese cooking. ... Read more

This book is really quite interesting, very thorough, and the recipes truly are as about fat-free as you can get. Interestingly enough, a lot of them are also low carb as well. Very informative about Greek culture and customs as well. My only wish is that there were more recipes although there is enough presented to keep one busy for quite some time. I highly recommend this book. The author certainly knows how to invite strangers into her life (and to her table.) This books is exactly what it states it is and is truly a keeper.

I made the Rigatoni in Spicy Olive Sause. The recipe calls for 1/2 cup of rigatoni. This is not enough to feed 2 people. The sauce 8 plum tomatoes chopped also was not enough. This is the only recipe I have made. I am not pleased. If the recipe was for one person, it should have said so.

Some things ae pretty good.Others taste fairly bland.Concept is good.Not having an upscale market nearby, it is sometimes tough to use cook books that simply put the words "Fat Free" in front of every ingredient.Fat free meat, fat free chicken, fat free cheese...some of these recipes would be a lot better with some fat - and upgrade to the the "low-fat" version.

It's hard to find a good "Non-Fat" cookbook, since most cooks don't truly go "fat free," they simply reduce the amount of fat but still use it. While that's a good start (and I wouldn't claim that less than a gram of fat per serving will kill ya'), I'm still looking for actual cookbooks that eschew fat / cholesterol entirely according to something not unlike Ornish or Esselstyn type diets (meat, dairy, oils, avocados & nuts are generally all verboten or at best strictly limited).

That said, it's a pretty good low-fat cookbook, and should be relatively easily adaptable to "non-fat" pantries, by those looking for truly *non-fat* vegetarian dishes.

Anyway, for those less strict about the low-fat/non-fat divide, this seems like a very yummy cookbook to peruse...

It has about 200 recipes, as well as a section in the front about low-fat substitutions, healthy cooking, etc. It seems moderately well organized into sections for appetizers entrees, soups, salads, pastas, breads / pizzas, sauces, entrees and desserts. Most pages are black and white with ingredients instructions and nutritional information. There are interspersed cartoonish line art drawings, and there are also occasional full color plates showing a number of the dishes. Most, however, don't have pictures or cartoons.

Recipes are from meatballs to marinara, gnocchi to minestrone salad, chocolate-hazelnut biscotti to baked spinach and artichoke spread. All things Italian and Italian-inspired seem to be included in this volume. If not all things, then certainly plenty. It runs the gamut.

I've tried, really really tried! I went on a fat free and low-fat cookbook buying binge over a year ago. I bought just about every "Fat Free" book Sandra Woodruff put out. Know what? Not one good recipe out of any of them and I gave away the books or donated them to Goodwill. How is it that I can't find one recipe out of these books that tastes even halfway decent but others can? Are my standards so high? I just want low fat, low calorie foods that have a lot of flavor and aren't going to take all day to make....is that too much to ask? Of her books, apparently so. Read my reviews and you'll find some much better books to spend your hard-earned fatfree/lowfat cookbook dollars on. I swear that at one time I had a row of FF/LF cookbooks 15 feet long....there are a lot of ff/LF cookbooks but not many worthy of the name. Shop smart! Don't buy this book!

OUTSTANDING and FABULOUS!!!!! Her recipes are so delicious and her cooking tips have allowed me to adapt my mother and grandmother's regional recipes into healthier versions. Try Ms. Woodruff's version of Tiramisu---I serve it often and it's to die for!!

I collect all her cookbooks because the recipes taste authentic to the higher calorie ones. Good food is all about nutritional value and flavor. This book is a winner!!! ... Read more

Yet another gift book for young couple building a healthy cookbook library.They love sweets, chocolate, cakes, cookies, etc. and this was a good addition to show there are decent alternatives to Butter, Oil, and more Butter.Not really secrets to experienced low-fat fans, but great for low-fat newbies.

I know that some fat is good in our diets and I don't advocate eliminating all of it; however I know I personally can eat WAY too much in my desserts.This book has given me tremendous insight into how to reduce and/or cutout the fat in my desserts.The recipes are tasty, moist when they'resupposed to be, chewy when they're supposed to be, crisp when they'resupposed to be (you get the idea - these are not gooey, nasty fatreplacements).I especially like the Prune Puree and have used it inother recipes very successfully.I highly recommend this book as asensible addition to your healthy living cookbooks.

Well let's just say that I have been on a whole lot of diets and of course not lot the weight. I have felt bad about eating and used to think the only way to be slim was to starve myself, and I did. Then I was so sick of beinghungry and I went to the library in search of a cookbook on low fat foodsand found this book. I copied down some recipies and went home and triedthem. WELL I was so impressed that I bought the book and read the wholething and found out that I could eat 2000 calories a day and loose weight.I have bought 2 of her books and going out tonight to buy her fat freebaking book. It's not Vegan; it doesn't claim to be.But, most of the recipes can be made Vegan by substituting some ingredients.

That said, the recipes seem to be very nice, and interesting.

The book is well written, with plenty of recipes.It is great for someone who likes to bake & who wants a lower fat diet.The products are not the same as a high fat recipe, but they are not supposed to be.Some of the ingredients are not easily found or made, but they are tasty and very low fat.

5-0 out of 5 stars THIS BOOK IS SIMPLY AMAZING
I first knew about this book thanks to a Google search, tried one of the recipes in the web and knew I HAD to buy it! Since the book reached me I have been baking one recipe after another...and almost all deserve at least 8 out of 10.
The beauty of this book is that it does not only give you ready-to-made recipes; it suggests substitutions as well. I mean, with its advice you can virtually convert any conventional recipe to fat-free. Or you can take a recipe from the book and substitute something for one or two ingredients...with equally superb results.
The key of the book is to substitute something fatless for all or part of the fat in the recipes. So far I have mainly maderecipes that substitute all the fat and I am amazed with the results. I never imagined that using puréed prunes, overripe banana, or applesauce would produce such delicious results.

Some examples I've tried are:

Busy Day Banana Cake (page 49): this is simply amazing, even without the addition of the cheese icing it is terrific. Don't miss the nutmeg since it goes perfectly with banana, it will fill your kitchen with its aroma while baking the cake. In this cake, I substituted wholemeal flour for unbleached flour, added a few chopped dried apricot and used molasses instead of maple syrup.

Fudgy Cocoa Brownies (page 165): also yummy-yummy.It's made with prune butter, which is basically prunes and water or juice, to your choice. Prune butter, as well as prune purée (which contains lecithin as well) will keep in the fridge for 3 weeks, which is so convenient. To this I added dried cranberries and instead of oat bran I used wheat bran and added 30g milled oats.

Almond Biscotti (page 220): this recipe uses half-fat butter or margarine but I didn't have it so I used conventional margarine and substituted applesauce for the rest. Really, really good, and keeps well.

Cocoa Zuccchini Cake (page 97): this was so scrumptious and froze so well...I used macadamia nuts instead of walnuts and applesauce instead of nonfat buttermilk.

I have even built my own "Woodruff pantry" with the basic products needed. Basically they are: brown sugar, molasses, honey, applesauce (I made it myself in my crockpot), fruit preserved in juice, juice, dried fruit such as apricots, raisins and of course prunes), nuts, egg whites, egg substitute, whole wheat flour, oats, cocoa powder, skim milk and wheat germ. You don't need all to make a single recipe, of course, but if you have all of them you can be sure you'll be able to make any of them, maybe making a few substitutions.

In an nutshell....I would really recommend this book!!!!!!!!!!!!!!!

When her husband developed significant health problems and was placed on a restrictive diet, Marcia Sabate' Williams had to give up her traditional way of cooking. In Cooking the Fat-Free, Salt-Free, Sugar-Free, Flavor-Full Way, she shares her new, healthy recipes--the ones that brought her husband's cholesterol, triglycerides, blood pressure, and weight down to normal levels. Williams says that modifying her cooking habits was hard at first, but it got easier with practice. "It really isn't that difficult, and it's good, regular food--not weird food. I still cook the dishes I made when I was first married, except I just prepare them differently." The Pritikin no-salt, no-sugar, no-fat diet is the foundation of most of her recipes. A native of New Orleans, Williams "cajunized" many of the recipes. She begins her book with a general discussion of how healthy foods can still be flavorful. Then she gives an overview of sodium, fat, and sugar, and how to use herbs and spices in cooking. She provides a list of suggested basics to keep on hand, with explanations of why some ingredients are preferable to others. An extensive list of food exchanges, helpful to diabetics and others following the ADA Exchange System, is also included. The recipes start with the basics, like stocks and gravies, then move to breakfast specialities. Entrees' are divided by meat, poultry, and fish. Vegetables have a chapter to themselves, as do grains and beans.There is also a chapter for salads and salad dressings and one for snacks and dips. As does most cookbooks, this one ends with desserts. All recipes have a complete listing of nutrition information. Each starts with Williams's comments about how she developed it. The ingredients list is printed in bold type, followed by the preparation instructions in regular type. There is one recipe per page. I first saw this book in the new-book section of the local library.I took it home and tried several of the recipes.I found the book to be easy to read and the recipes, in general, good and easy to prepare.There is anemphasis on red-pepper and hot sauce in many of the recipes (the author isfrom Louisiana)and I would suggest going lightly on those ingredients if,you have children, like I do - they refused to eat the dishes they foundtoo hot and spicy. I was unable to find the cheese often listed as aningredient, but the author did list a source for ordering it if it wasunavailable in your local grocery stores.Many of the recipes used bakedbananas or un-cooked, mashed bananas as sweeteners. This is fine if you caneat the dish in one or two sittings, but bananas do not keep well and turndark upon refrigeration, making the dishes unappealing to look at. Theauthor also recommends using apple juice concentrate as a sweetener in manyof the dishes and this worked well.The author included a wide variety ofdishes and many that were vegetarian for those interested in meat-freerecipes. I particularily enjoyed the chicken salad and some of the pastasalads. After being issued an ultimatum to reduce my weight and cholesterol, I started using this book and am delighted. The recipes are easy to follow using everyday ingredients and actually taste good. Doris Cross adds her own personal comments and encouragement, as she has lost 100 pounds herself and has kept it off. I never thought I would eat fat-free mayonnaise until trying her recipes. I lost 6 pounds the first week.

When I found I had high cholesterol, I knew I had to make some lifestyle changes as far as what I eat. I grew up on good old fashioned country cooking and so many of the low fat cookbooks are full of recipes for food Iwould never even be tempted to try. I also needed recipes for things thatmy family would eat and that means that the food cannot resemble diet food!Well this cookbook has it all. I have tried numerous recipes and after myfamily tells me that it tasted great, I say "Good, it was lowfat!!" This book is well worth the money. The author speaks from experience and has an easy to understand life-style change for anyone who needs to lower their cholesterol. She has a chart that you pick out how many calories you are to consume daily and tells you exactly how many TOTAL fat grams you are allowed in a day depending on if you choose a diet of 25% fat or 10%. You don't have to do any math. All you need to do is to ask your doctor how many calories you should be consuming. She also recommends 1 hour of exercise, which is reasonable. By following this book my cholesterol went from 239 to 175!

This is my favorite cookbook to refer to for low fat recipes (and I have A LOT), they are easy and delicious with lots of variety. Not the usual tastless stuff.Only drawback is the layout is very "plain Jane" and not very many pictures, but don't let that stop you -- this is an excellent buy.

There are some really delicious recipes in thisbook--Peking Turkey & Vegetables; Sweet and Spicy Carrots; Rice andOrzo Pilaf (absolutely delicious), etc.If you are looking for a lot ofmeat recipes, you don't want this book.Obviously meat has fat, so therearen't a whole lot of meat recipes to choose from.I don't usually eat awhole lot of meat anyway so this was fine for me.
